Wild Epitome - Honey Mead and Save the Bees - Cheers!
Creating awareness of the importance of saving the bees while producing fantastic honey meads and specialty wines for people to enjoy.
Honey Mead - The ‘old’ ‘new’ wine. Somewhere between beer and wine.
What is it? Honey Mead is an alcoholic beverage derived from fermented honey and (if desired) other added ingredients (herbs/spices/berries, etc.). Its fermentation process is similar to wine, but typically has a higher alcohol content, and mead has appearance similar to beer.
What was it? Thou mead is not well known to the modern-day person, it is said that honey mead is the oldest known alcoholic beverage. What is our plan for it? Mead is a beverage we want to create a ‘new’ buzz about because it’s too good not too. Hence, our comment of the ‘old’ ‘new’ wine. We also want to use that same “create a ‘new’ buzz” aspect to make people aware of the need for bees. Whether it’s for honey or other foods.
Save the Bees - We all need them.
Why? Less bees = less natural food crop pollination = increased food cost! Did you know that honey bees are vital to pollination for chocolate, coffee and many fruits for producing fermented beverages!! Honey is the main ingredient of the tasty beverage of mead.
How can you help? Everyone can get involved in simple ways. Plant a flower or become a beekeeper.
In 2017, we began to establish a winery called Wild Epitome LLC. With many missions in mind, the winery would not only produce high quality honey meads and specialty wines, but would also provide educational events to the community regarding how/why others need to become involved in saving the bees and also work with other small businesses in the area to help increase the tourism in beautiful northern Wisconsin.
We’ve done a lot of hard work and accomplished so much this past year. We have; TTB Federal approval, WI State personal background approval (but not building approval due to WI state alcohol statue), Local zoning approval, bonding, equipment purchased to start production, suppliers set up for ingredients and bottling products, and our recipes ready to go.
We leased a building unit to establish the winery. Upon the WI state alcohol permit approval process we were notified of a WI state alcohol statue regarding tiers of approval. WI does not approve an alcohol license to a person within the direct line of influence of someone who already has one, and the lessor of the building unit has one. Therefore, we needed to find a different location for the winery.
Still determined, we began to search for a different location. Being in a small town, we found that available rental locations that may be suitable for WI health department standards without extensive renovations, are already associated with a WI liquor license as well.
Wielding down our options lead us to considering the purchase of a building. We have located a building that has an ADA restroom, meets safety codes, would be perfect for educational events/tasting room, but will still involve a production floor renovation to meet winery plumbing/flooring draining standards.
The Wild Epitome LLC business plan, budget and capital were based on the original location. To this point we have fully funded the winery on our own with no outside investors or loans. Unfortunately, due to the unforeseen landlord/WI liquor statues issue of the original winery location, we’re finding that there’s not enough capital remaining to cover ingredient purchases, paying the rest of our current location lease and the down payment, relocation and renovation cost of a different building.

We'll get you started on the quest to save the bees. Planting flowers helps 'save the bees'. Floral pollen offers bees protein and floral nectar provides bees with carbohydrates, both of which bees need to survive. Many vegetables and fruit rely on honey bee pollination. They also play a key part of the pollination of chocolate, coffee and fruits used in fermented beverage making. :) And of course the producing of honey. Risks and challenges
Challenges we've overcome and forsee -
Challenge - First Kickstarter project was unsuccessful
Resolved - Over time, we were able to slowly purchase equipment, receive local zoning approval, receive Federal TTB approval, apply for our WI state approval, complete the bonding process, establish insurance and secured a location. We did not have investors or loans.
The resolution of the following 3 challenges are reliant on the success of this campaign.
Challenge - WI State statue for licensing regarding direct line of influence
Resolution - Found a new location to move our winery too.
Challenge - Capital needed for down payment to purchase, renovation cost and relocation cost.
Resolution - Look for sources of income to raise the capital needed..
Challenge - Space for expansion in 2-3 years
Resolution - New location has enough space to allow for future expansions that we were planning to do in 2-3 years from now.
