Voyageurs Sourdough makes naturally leavened, hand-crafted bread with local grains in Green Bay, Wisconsin. Voyageurs Sourdough was started because you couldn’t find a loaf of sourdough anywhere in the Fox Valley, and we wanted to make sure people of our community could find handmade, healthy, delicious fresh bread to place at the center of their table.
A nutritious loaf of bread is more than just the ingredients; it’s the people you share bread with around the table. The nourishment comes from the discovery and exploration you get to do through the food around the table, the laughter with family and friends, and gathering with people you love. The table is the center and heartbeat of a home.
Now more than ever, we need to gather around the table. It’s where we can bring community together, spark new ideas, let people know they are loved, and share big belly laughs.
We want to be the first sourdough bakery to come back downtown and bring the bakery heartbeat back to the center of the city.
Why we need your help
In order to continue our bread baking business, we need to expand our capacity with a new bakehouse and our own equipment. This expansion is crucial in order for us to create a sustainable business for our families, which also means being able to continue making bread for our community.
At the shared school kitchen we’ve been baking in since August 2018, we’ve reached our absolute maximum capacity. It’s been the perfect place to get started, and have proven there is a demand for high quality, hand-crafted sourdough in Green bay. Now we must increase the number of loaves we bake each hour of the day.
Currently, we are using equipment that a passionate home baker would use, but on a commercial scale. We bake in cast iron pots to create a steam environment needed for sourdough baking. The problem is some days the bread turns out better than others. We’ve made it work, but the quality of our product suffers, and we are very limited to the number of loaves we can bake at a time.
Right now we can only bake 19 loaves every hour. In order to stay in business, we need to be able to make at least 50 loaves an hour.
This is why we need your help. We need to purchase our own bread oven, and open our own dedicated Voyageurs Bakehouse.
The oven & the bakehouse
The majority of the funds we raise here on Kickstarter will be spent on the purchase of a bread oven.
This new oven will allow us to:
- Bake at least 400 loaves a day, which means we can expand to Appleton, supermarkets, and meet the growing demand for deliveries and farmers’ markets.
- Bake new types of bread that many of our customers have been asking for! Bring on the croissants, focaccia, brioche and cinnamon buns!
- Bake with more efficiency and consistency
The oven is the heartbeat of a bread baking business. It breathes a new type of life into the bread and takes it from a raw living fermentation to an edible masterpiece that nourishes your body.
The selected location and space for our new bakehouse is inspiring, bright, and open. It will become Downtown Green Bay’s only bakery of its kind. You will be able to come in and watch us hard at work in the production space, buy freshly baked sourdough goodies, and also enjoy a coffee or toast at our bar top (which is also in the 2019 plans).
If we don’t raise the funds we need for a bake house, unfortunately we won’t be able to continue our bread baking business. Right now we are in the process of building a dream… and with your support, we’ll be able to take that next step in making it happen.
About our bread
Voyageurs Sourdough is naturally leavened, hand-crafted bread made with local Wisconsin grains. We are Green Bay’s ONLY sourdough baker which is why we started Voyageurs Sourdough in the first place—because we wanted to eat this type of bread and bring it to our community. Our sourdough is truly hand-crafted; meaning we do all of the work by hand, where many people would use machines to mix the dough, and shape the loaves. The rise in the loaf is created by the use of a wild yeast starter (there has never been any commercial or powdered yeast used in our products).
It’s the simplicity and high quality ingredients that is the difference you can taste in our bread. It’s just three simple ingredients in our bread: Flour, Water, Salt.
The grains are sourced from local farmers using organic farming practices. We’ve built personal relationships with folks, and we know that quality ingredients makes quality bread. When you taste our bread, you’re getting a taste of northeast Wisconsin heritage.
To be honest, our bread is not a unique product, it’s sourdough. We haven’t revolutionized bread. We practice tried and tested techniques that are centuries old. What’s most unique about us is that we’re making it here in our Green Bay community, and delivering it to our customer’s doorstep for free.
To date, we have delivered to over 500 homes around Green Bay, and put on over 4000 miles in the city.

Being a baker means that you are continuously learning, experimenting with new techniques and ingredients, and also running the business. Being a baker’s wife means that you roll up your sleeves and get hands in dough when needed, and hustle to keep the business operating smoothly. We believe in fostering creativity, celebrating our differences, and supporting each other in this wild journey. We are united with the same goal: to contribute to the growing food scene in Green Bay by making the best possible sourdough you can get your hands on within 200 miles!

Our goal is to raise $25,000 in our Kickstarter campaign. As mentioned, the majority of the funds will go towards the purchase of a bread oven. However, that is only around 30% of the total costs needed to set up our new Voyageurs Bakehouse. Our Kickstarter goal is the minimum we need for the bread oven. If we surpass our goal of $25,000, we will spend the money on other equipment like a professional dough mixer, shaping benches, other bakery equipment, bringing the building up to code, and making an awesome coffee bar for our community to enjoy.

Risks and challenges
Since the space we are planning to move into is a completely blank shell, we have to build everything from scratch and bring it up to health code. Our Kickstarter campaign only covers the cost of our major equipment purchase which is the oven; it doesn’t cover the cost of the build-out of the space.
We are currently working with an experienced team to help us plan the layout of our bakehouse and to have the plans approved by the city of Green Bay and health department before any build begins.
The plans of the space are in early stages, and large construction projects like this one can experience all kinds of hiccups and delays for various reasons (some of which may be completely out of our hands).
