The Vinci Auto Pour Over does allow for the use of either a paper or a permanent filter, the choice is entirely up to you. When using paper filters simply leave the permanent mesh filter out. The interior brew basket is cone-shaped and supports either #4 or #2 paper filters.
Yes, the Bloom function works with the Wake to Brew function. When setting the Wake to Brew first set the time you would like your pour over to be ready, press the Timer On button, then the Bloom button. Your pour over coffee will brew at the specified time, using the Bloom feature.
When the coffee grounds are exposed to too much hot water, or too little the grounds are over or under-extracted. Over extraction results in bitter and astringent flavors while under extraction results in sour flavors. Even water distribution results in a balanced, smooth and clean cup of coffee.
The Vinci Auto Pour Over uses a 1050 watt heater that keeps the water temperature at 85°C – 90° C (185°-194°) when it comes in contact with the coffee grounds. Because the water is dispersed in an even stream, rather than spurts that other machines produce it retains a much more consistent temperature as well.
