About this project
V-GRITS will be rolling all over town for lunch, dinner, and late night snacks. We'll keep you in the loop with tweets and a calendar on the website. And because Louisville just happens to be a hop, skip, and jump away from so many other cities, we’ll be available for private events (and heck, maybe some public ones) in Nashville, Cincinnati, Indianapolis, and more.
Earlier this year I was the first vegan chef to win Food Network's culinary competition Cutthroat Kitchen! I beat out three other chefs to bring home $18,000. I put a lot of pressure on myself going on the show to represent not only Louisville, but vegan cooking in the best possible light. I'm honored to have had the opportunity, and I am putting 100% of my winnings (including the rest of my piggy bank) into purchasing a food truck, to bring vegan yummies to the masses - that's you! I need your help to finish outfitting the truck with the necessary cookware to get this baby on the road! - ♥ Kristina
the important stuff
The food! V-GRITS will always serve southern-style meals. Think chicken & dumplings, hearty chili, biscuits & gravy. Some highlights from the initial menu include a hot brown melt, BBQ sliders, and of course - cheese grits. We gotta have grits if it's in the name, right?! The ingredients are all made-from-scratch. For the meaty dishes we have signature recipes using wheat protein as a main ingredient. We'll always have gluten-free options too, like tuna melts and BBQ made from jackfruit. The cheeses are also our own creations - slices, sauces, and more, made from nuts! That's nuts!
I’m using my savings and winnings from Cutthroat Kitchen to purchase this sprinter van. I chose this orange machine because it’s already equipped with plumbing and service windows, and being that it’s a newer, more reliable vehicle, it will be perfect for long road trips to other cities!
We're setting up a program so that a percentage of profits from your purchases will go to charities, including animal shelters and sanctuaries. You can help pick which ones! Another major goal is to work with local homeless shelters and soup kitchens to donate food. We'll organize special days to serve free meals to those in need.
Our food will never be served in styrofoam. The EPA has listed styrofoam as a possible human carcinogen. It is non-biodegradable (it never ever disappears for pete's sake!) and it is considered the main component of marine debris. We'll stick to recyclable or biodegradable material. Respect yo momma earth.
V-GRITS is serving meals that are free of animal-products because by doing so, we are choosing an important stance not to support an industry that inflicts so much cruelty on the voiceless. We are also taking care of people through food. A vegan diet contains no cholesterol, less saturated fat, and a multitude of scientific studies have shown that it can help prevent certain diseases, including heart disease, cancer, and diabetes.
Kentucky comes in dead-last, or nearly so, in multiple health rankings. Heart disease, diabetes, obesity, overall health and wellbeing. We have got to GET IT TOGETHER. We can still enjoy our favorite meals without the saturated fat and cholesterol that is causing us all to kick the bucket too soon. Let us show you how easy (and freaking delicious) it can be to add years onto your life.

why do we need $12,000?
I'm pouring everything I have into purchasing the truck, modifications to it, start-up costs including permits, insurance, kitchen rental, storage space for the truck, ingredients, to-go containers, cookware, and all of the little extras that will pop-up. All of the funds raised here will go towards the following:
- $800 - Propane Griddle - For fryin’ up sammies, seitan, BBQ, and more!
- $800 - Steam Table - This keeps all the food hot! Super important for the grits, chili, mac & cheese, seitan. All.the.noms.
- $600 - Propane Double Burner - For prep'ing and warming up grits grub extra quick!
- $400 - Stainless Steel Prep Tables - Keepin' it real (& real clean).
- $600 - Refrigeration - Veggies be chillin'
- $400 - Propane Tanks - Fuelin yo food.
- $3500 - Hood System - Necessary to vent the cookware in the safest way possible.
- $5000 - Installation - Safety first means we need professionals to install all of the above equipment, propane lines, electrical lines, etc.
who's behind the truck?
Or, inside the truck, I should say. Hi, I'm Kristina. Or Krissy, if you know me well. You may have watched me win an episode of Cutthroat Kitchen on the Food Network recently, or maybe I handed you a veggie dog on the streets of any-city USA while I was campaigning with PETA, or perhaps we waited in line near each other for 48 hours for a Hanson concert in, again, basically any-city USA. For those that don't know me, I'll try to keep it short. Cooking meals that make people reconsider their eating habits is my passion. I love talking to people about where our food comes from. I grew up on the fattiest, most unhealthiest food you can imagine, cooked by the sweetest family ever from the hollers of appalachia. So that's the food I love to recreate. Southern meals that feel like coming-home, but this time they're good for us, and for the animals with whom we share this life. I'm ready to work my buns off in this food truck, and serve you meals that will change your life (or at least your taste buds)! Please help me make this dream a reality!

Risks and challenges
We are prepared to take on the challenges as they come. Quite a few food trucks have come and gone in Louisville, perhaps not aware of the time and energy it takes to get the business up and running. We are dedicated and excited to work daily on getting fresh vegan meals out on the streets!
Launching in the winter:
It is the least busiest season for food trucks. Even if it's snowing, we'll be rolling. We're aware it may not be very profitable in the beginning, but we're also prepared to push through the slow season and use it as a learning curve.
Louisville has a handful of well-known trucks serving up some super tasty meals. But V-GRITS is the first of its kind in all of Kentucky, as a food truck or even restaurant, to offer southern-style vegan meals that you can't find anywhere else!
We know things happen, especially with vehicles that are hauling heavy cooking equipment. That's why we chose the newer sprinter, and we've already had it checked out by a mechanic.
