About this project

{The purpose of this project is to fund the production of a print cookbook that will make baking fine, gluten and grain-free pastries accessible to anyone who wants to make them.}

Living a grain and gluten free lifestyle shouldn't mean that every party, holiday and celebration you participate in has to be an uncultured, painful experience where the best option you have to eat (or serve) is store bought gluten-free "treats" that taste like cardboard.

Whether you choose to eat this way by choice or by necessity, you shouldn't have to sacrifice your healthy lifestyle in order to participate in the celebratory parts of life.

After going grain free because of medical reasons*, Jenni Hulet (aka The Urban Poser) has applied her considerable culinary skills, based on years of baking pastries, cakes and other delectables, to the task of making these things accessible to people who live with food sensitivities and other dietary restrictions.  

With Jenni's passion for food, photography and writing, the only thing we need to make this happen is the tools and resources to actually create the content.....

And that's where you come in. Any donation, big or small, can help us realize this dream. We may not be ending world hunger, but we are most certainly putting a smile on the faces of as many people as possible.

Risks and challenges

If we get funded we will strive to complete the book on schedule. The finished copies of the book should be available around October 2014. The other incentives will be rolled out over the next few months.

FAQ

  • Mostly honey, pure maple syrup and pure maple sugar. There will also be periodic use of coconut sugar and coconut nectar.

  • This book will be about 98% casein & lactose free. I do use ghee (clarified butter) which is technically dairy, but free of both casein & lactose when purchased from the right source. However, ghee can be easily substituted with other fats like organic palm shortening if it is still a problem. There will be about 5 recipes in the whole book that may contain raw cheese in the savory section, but that is it.

  • Absolutely! I will have plenty of egg free recipes in the book. But there will also be plenty of egg based recipes as well. :)

  • In total, the book will be Gluten, Grain, Casien, Lactose, Soy, Corn, Cane Sugar and Refined Sugar Free.

  • I try to keep my recipes as simple as possible. However as with any fine & allergy friendly cooking there will be some specialty ingredients required for a few of the recipes. If you are new to this type of baking/cooking there maybe some new ingredients on your grocery list, but you will quickly become familiar with them. I will provide a section in the book to explain all the ingredients and where they can be purchased. Most can be found at your local health food store.

  • Unfortunately subbing eggs in grain free baking isn't as easy as it is in grain based baking. Often times eggs are specifically needed for the structure and volume of the grain free baked goods, due to the nature of the "flours" used.

    Some people use recipes with ingredients like psyllium seed and xanthan gum to help with binding and volume but I do not. Feel free to experiment with those ingredients as subs for some of the baked recipes. However I won't be providing information on that in the book.

  • Yes, there will be plenty of nut free recipes in the book. I'd say over 50% will be nut free. But not all of those are baked goods.

  • I use mostly Almond flour, Coconut flour and Arrowroot flour. Arrowroot flour is only used in a portion of the recipes though. Many of the basic recipes are either just almond flour or coconut flour. There will be plenty of recipes for those who are concerned about starches.

  • Because shipping costs vary significantly from country to country, we are unable to provide a consistent pledge amount to ship the book internationally.

  • Yes. Coconut is a member of the palm family, which is not related to nuts or peanuts. Coconuts are large seeds adapted for water-born dispersal and remain viable after having floated in the sea for six months or more. Though it is possible for some people to have both a tree nut allergy and a coconut allergy simultaneously, it's not the same thing.

    The Food Allergy & Anaphylaxis Network (FAAN) does not recognize coconut as a nut. However, in 2006 the FDA classified coconut as a "tree nut" even though it is technically a drupe. No wonder there is so much confusion when it comes to coconuts!

    Still is recommend that you talk to your allergist before consuming coconut based products IF you have tree nut allergies. Again, it is possible to be allergic to both tree nuts and coconuts simultaneously.
