We don't want to miss any detail, but that gets expensive. This space was not previously used for food & beverage service, so it demands a more thorough build-out. This includes a whole new floor, new plumbing/electricity, extensive paint & stain finishes, an ADA bathroom, a tiny kitchen, built-in furniture, and the bar top itself. The remaining beautification is where you come in. The goal we are trying to reach equals about 10% of the overall cost of the project, but that 10% is actually the most important since what it's funding is all of the things that you will be able to see and appreciate during your numerous visits to The Jewel Box.

We have a great team working hard on the Jewel Box already. With the help of Petra Simmons' architectural designs and layout, North By East Building Company's build-out of those designs, More & Company's brand/identity expertise, my industry experience, and your contributions, we will be able to take what was already going to be a cool place and make it sparkle brighter.
Risks and challenges
As with any start-up, there are some risks involved. Getting licensed to sell food and liquor relies on passing all inspections. Not receiving this license would be catastrophic. Thankfully, Petra & Peter know what they're doing and can mitigate any snags that pop up. And they've already dealt with a few, trust me. Because it's such a small space and very little cooking is being done, there should be no problem passing all inspections and getting licensed.
It's well known that most restaurants and bars fail within the first year. I've been working in this industry for over 14 years. I've worked as a dishwasher, busboy, cocktail waiter, server, cook, host, bar back, bartender, consultant, and bar manager. And when you go out to eat & drink as much as I do, you start to catch on to what works for Portland and what doesn't.
