What an amazing response to our campaign so far, in 2 weeks we were able to meet out initial $20 000 goal. We CAN however go above our initial goal and our campaign will be live one way or another until April 15, this means we have added a STRETCH GOAL.
If we can reach $25 000, Malinche will be able to introduce an ice cream machine to the truck equipment that we know you all will loooove.
Stretch goals work the same as our initial goals- you pledge for a reward and we strive for a (new) final goal.

Malinche will take the form of a food truck offering Mexican Street Food in Regina, SK. All of our food will be ethically sourced and our tortillas handmade. Malinche is committed to high quality food and will bridge the gap of accessibility. We want our food to be available and affordable for everyone. We have partnered up with some of the best farmers and foragers and want to show you what we have found.
The Malinche truck will be a seasonal fixture at a small business hub in the General Hospital area. Currently involved in this space is Malty National Brewing Company, 33 1/3 Coffee Roasters and T+A Vinyl and Fashion. We will be open 3 days a week to start, as well as attending all of our favourite festivals.
One of our main goals will be to have a low environmental impact, educate through food and have an overall positive impact on the local food system. Part of our commitment to social change will be to put forward a portion of our proceeds to a nonprofit organization that is actively focusing on improving food security in Regina.

The Backyard is currently a pop-up, farm-to-table restaurant serving ingredient driven dishes in Regina, Saskatchewan. We have spent the last two years working exclusively with locally sourced and organic ingredients. That means that we support small producers, we care for your health, the environment and we are pushing for positive change in the restaurant industry.
Up until now The Backyard has been a rewarding project and a great way to build a foundation, however this is only the beginning. We have big dreams for a brick and mortar restaurant supported by an abundant garden and our closest producers and foragers. Though our aspirations might be big, we know the best way to get there is one step at a time. We are proud to announce the launch of a sister project that reflects Chef Mariana Brito's heritage and childhood.

Head chef Mariana Brito hails from Tijuana, Mexico, where she attended the Escuela de Arte Culinario before training in Spain, New York, South Carolina, and Copenhagen under chefs of Michelin starred restaurants. Since moving to Saskatchewan, many have gotten to know Mariana from her time spent at Le Macaron, Crave Kitchen + Wine Bar and teaching classes at Schoolhaus Culinary Arts however she is still a new face as far as driving her own project is concerned.
At The Backyard Mariana joins her global background with a passion for organic food and her strong relationships with local producers, she centres the flavours of modern Mexican cuisine in the landscape of the Canadian prairie.

Risks and challenges
Some may say that opening a food truck is risky, especially a seasonal truck in a climate with notoriously short summers. We understand that there are going to be setbacks in the process of opening such as staffing, permits, etc. However, because we are taking over a truck that has previously functioned within Regina's bylaws, it is ready to go in that sense.
After working as a pop-up for two years, we are used to working under unique circumstances and as a result have built up a resourceful, hardworking and focused skill set.
We are confident that our ingredient focused menu and Chef Mariana's experience combined with her passion for honest, Mexican food will be the driving factor in Malinche's success.Learn about accountability on Kickstarter
