THAI FRESH COOKBOOK
I started cooking at the age of 5, helping my grandmother and my mother around the wood-burning stove in my grandma's kitchen in the outskirt of Bangkok, Thailand. I grew up around food, very good food.
Cooking and sharing is my passion. I’ve been teaching Thai cooking for 16 years. I love to teach, to build confidence in people so they can take their new skills anywhere they want and make them their own. The skills aren't difficult to learn, but building the confidence is the complex part. I want people to be able to make big dishes that everyone can share together and make friends via food. Empowering others in this way is my passion.
Over the years, I've learned that many people are intimidated by the ingredients in Thai food. With just 3 types of basic sauce you can cook literally hundreds of dishes, but a tiny shift in one ingredient can drastically alter the taste.
I created this cookbook as a solution; a key to understanding the techniques and combinations of flavor in Thai cuisine. This cookbook is the result of years of teaching people how to cook. It was inspired by all of my experiments, all of the comments made in class, all of the feedback I received, all of the the fears expressed, and the modifications made by students to make the food their own. It's all here. My goal is to make Thai cooking challenge free.
HOW IT ALL STARTED
I started building community through food as soon as I arrived in Austin in 2001, and I continue to pursue the same passion. I want everyone to gather all the time; a dinner party every day with food in the center of the table to just grab. I want to see people build their own communities with food, make new friends, and connect.
After graduating from UT, I decided to try something completely different. I started a business called Thai Cooking with Jam and started teaching people in their home kitchen. I also hosted classes in my own small 200 sqf. kitchen. I started a stand at farmers' markets to sell my food and promote my classes. At the farmers' market, I learned to incorporate vegetables at the market stands, vegetables that are not common in traditional Thai cooking, into my food. I started using produce and meat from local farmers and have been committed to this practice for my cooking for the restaurants, my classes, and in my own kitchen. Cooking classes are now taught in Thai Fresh commercial kitchen.
This book will contain about 75 recipes that have been tried and tested. These recipes use ingredients that are readily available at your farmers' market. The book will also incorporate 10 coconut milk based ice cream recipes from our new brand Gati. The book will also contain a section about wine pairing.
Wine pairing with Thai cuisine can be intimidating because of the spices. Rae Wilson of Wine for the People will be guiding you to pick the right wines for our recipes. Each recipe will also include a note for the best pairing.
The reason I’m doing a kickstarter campaign instead of a traditional publishing route is because I want this cookbook to be 100% from me—something that is genuine. In the same way that cooking is art, I want this cookbook to be a piece of art; to be an experience, a cooking memoir. It’s not just a cookbook, it’s storytelling. I have known Kim Lane, my editor, for over 13 years. Kim has been involved in food-related publications for over 10 years. I have known Jody Horton, the photographer, for over 10 years. Jody is a James Beard Award-nominated food photographer who has created 11 other beautiful cookbooks. Julie Savasky of 508 Creative has been creating beautiful cookbooks for local chefs and she has joined our team as a creative designer. I can't imagine a better team than these three. With them on my side, we will be sure to create a beautiful cookbook that will look good on the coffee table and will be ready to get dirty in the kitchen.
In order for this to become a reality I need to raise $60,000 to cover the initial run of the book. The money will mostly go towards printing cost of the first 3,000 copies. Cooking is simple but it won’t be simple unless you get good guidance. My dream is that this book will give you the confidence to create your own meal and share it with your friends and family.
Risks and challenges
Every project has its risks, but we are happy to tell you that we have gone 30% into production of this book. We have been working hard in the photography studio, we have been writing and perfecting the recipes, and the design is set. We still have some work to do to make this book a reality but the book is definitely well under way.
We are hoping to get the books out by October 2020. We need your help to get the books printed. The biggest challenge for us at this moment is to raise enough money to fund this project so we can get the books printed.
