About this project
Help Me Produce a Cooking Show for People With Food Restrictions The History: I was diagnosed with NCGS (Non Celiac Gluten Sensitivity), Dairy Intolerance and borderline Type 2 Diabetes a few years ago. It's hard enough to find any kind of food products for one of the three restrictions, but all three was near impossible. So I started experimenting with substitutes for gluten, dairy and sugar. After much trial and error, I began sharing my cooking to friends and family. Whether they were on restricted diets or not, I began to see how families could save time and costs by cooking cook one meal that everyone could enjoy. I wondered how many people were living with restricted diets and was amazed at my findings:

Years later, there are many gluten free products and mixes, and many dairy free (vegan), even a few restaurants, but there is not a cooking show, and that is what my project is about. The Project: Intolerant Cooking's first season includes 13 episodes and 26 recipes. Justin Thyme demonstrates how to cook family pleasing meals in a quick, easy way. His quirky and compulsive nature makes cooking recipes for gluten and dairy restricted diets fun and entertaining.
All recipes have been taste-tested and enjoyed by those on restricted and non-restricted diets. Most families have the same diet mix. Imagine how wonderful it is to create menus for the all family members while accommodating members who have these dietary restrictions.
Gluten and dairy free recipes* for the first season include: Tandoori Chicken, Hot and Cold Appetizers, Chicken Pot Pie, Chicken Cacciatore, Stuffed Eggplant, Baked Pear Pie, Pad Thai, Vegetarian Pizza, Vegetable Casserole, Popovers, Baked Shrimp and Scallop Normandy, Baked Macaroni and Cheese, Carrot Cake, Flourless Quiche. *Subject to change.
