Chilau has been described as "gumbo in a bottle" but each flavor has its own unique character!
The Flavor that started it all. Original is inspired by my grandmother's Crab Chilau recipe. I took the core flavor of her sauce and concentrated it into a multipurpose condiment that is especially delicious on seafood. Not only is it outstanding for making authentic Crab Chilau, it has a unique flavor which adds rich depth to non-seafood dishes and even vegetarian stews.
Original brings you bold gulf coast / low country flavor with plenty onion, bell pepper, celery, garlic and I spicy kick of cayenne pepper!

Truly an invention of mine inspired by my Florida roots. The Florida Citrus flavor has been famous for its nack to spice up Boody Mary's but it is personally my favorite for marinating shrimp and making Seafood Bisque-Touffee (a cross between Bisque and New Orleans Etouffee) which is printed on the side of the bottle.

11th Avenue Gumbo
This flavor pays homage to my GrandDaddy's Gumbo! He raised my dad siblings off of 11 Avenue in the Ybor City District of Tampa and was famous for his Gumbo. He passed away before he could share his recipe with anyone but I used my superpower of flavor memory to capture the essence of his gumbo's rich flavor. GrandDaddy's gumbo has no rules and there is was no limit to what meat or seafood can go in the pot.
11 Avenue Gumbo truly amps up "the holy trinity" (onion, bell pepper, celery) and features bold gulf coast gumbo flavor with plenty onion, bell pepper, celery, garlic and a spicy kick of cayenne pepper!

THE HISTORY OF CHILAU
Cuban, Italian and Spanish immigrants came to Tampa Bay in the late 1800's to work the factories in and around the Ybor City District. Once known as The Cigar Capital of the World, by the 1920's Ybor City was an epicenter for ethnic culture and fusion cuisine. As blue crabs were plentiful in the waters of Tampa Bay it quickly became a cheap go-to source of food for area families. Cuban residents introduced Crab Croquettes (Tampa Style Deviled Crab), which became the signature street food that remains true to this day. Another little-known dish called Cangrejo Enchilado (Crab Stew) was also introduced. Somehow, through mixing of cultures, recipe swapping and all the magic that happens when cultures collide, Crab Enchilado got shortened to just Crab Chilau, pronounced "Shalla" or "Shilaw" by many families. The macaroni factories and Italian diaspora had something to do with spaghetti becoming the staple foundation for the original dish while Spanish and African American families brought more spice variations and that Gulf Coast / Low Country depth.
