The idea to launch a food truck started with my frustration trying to find classic Chicago-style hot dogs in NYC. But as my husband Zeph and I talked about the concept for a food truck, we realized there was a lot about fast food that frustrated us -- from the quality of the ingredients to the wastefulness of the food industry in general. We knew we could do it better.
It all clicked when we landed on the idea to run our truck on recycled cooking oil from our deep fryers. What a brilliant system of re-use! We could be fueled by fries!
We launched our food business Snap in the summer of 2011 at street fairs and festivals. We got rave reviews for our classic American menu and unique specialties like panko-crusted avocado fries and the “Brat Mi,” a Vietnamese-style bratwurst sandwich.
Local & Sustainable
We’ve formed relationships with excellent local food suppliers like Rick’s Picks pickles, Dickson’s Farmstand Meats and Bedford Cheese Shop so that our menu can feature as many locally sourced and sustainable products as possible. When people eat local and do business with local companies, they aren’t just supporting their local economy, they’re helping cut down on the depletion of our natural resources. The majority of our nation’s energy consumption comes from the transportation of consumable goods, primarily food.Another new partner we’re excited about is Tri-State Biodiesel. This company can collect our spent cooking oil, filter it and return it to us in the form of biodiesel fuel. This fuel source reduces emissions by about 75%, and is about 90% less toxic than petroleum diesel.

Now we just need to raise a final $10,000 to renovate our Chevy diesel step-van into a custom food truck. That includes:
- Stainless steel interior lining
- Purchasing a generator
- Installing gas and electrical lines, outlets, lighting and plumbing
- Installing sinks & refrigeration
- Giving it a fresh coat of paint and custom decals with the Snap logo
Your donations will also help fund our initial supply of biodegradable paper goods and composting bins. And if we raise more than our $10K goal, it will mean we can get on the road that much sooner!

Our deep fryers are meat-free, so our fries are all vegetarian-friendly. In addition, we've dabbled in offering veggie dogs (and will continue to if there's a demand), and we've had a lot of satisfied vegetarians enjoy our "Chicavocado Dog" -- our panko-crusted avocado fries on a bun, dressed up Chicago style with the works.
