Here at Windward Jerky we pride ourselves on providing more sustainably sourced beef jerky than what is widely available on the market. Our jerky is 100% grass-fed and grass-finished with marinades using high quality ingredients and natural preservatives. We have, and always will, take steps to ensure the best possible product for our customers and the planet.
We recognize that to become fully sustainable in our business practices there is another key step we need to take -- sustainable packaging. For more than a year we’ve tested and researched this endeavor and we believe we are extremely close to realizing this ultimate goal.
Moving away from the trash business.
Our goal with this Kickstarter campaign is to introduce our new sustainable packaging, help fund our upgrades, as well as raise awareness for the plastic pollution issues currently facing our environment. We believe that if we are to continue doing business in the consumer packaged goods space, then it’s essential to maintain fully sustainable practices to minimize our carbon footprint.
This change is not without it’s issues however. The nature of our product necessitates a certain level of barrier thickness to maintain the jerky’s texture, flavor, and integrity. This barrier requirement keeps out oxygen and ensures a fully enclosed bag. The downside this creates is that we are not able to switch to 100% recyclable or compostable materials within current packaging technology. We do however have a bag that is as sustainable as current packaging allows and we are excited to make the switch.

Why is grass-fed beef better?
- Grass-fed beef is raised on open pastures. These cows are never confined to feed-lots.
- Grass-fed beef is naturally lower in total fat, and doesn't contain any antibiotics or growth hormones.
- Grass-fed beef is higher in Omega-3 fatty acids, which is crucial to a healthy diet and can reduce the risk of many diseases such as heart disease.
- Generally speaking, grass-fed beef is cleaner and healthier than conventional corn-fed beef.
So what exactly is corn-fed beef and how does it differ?
- Cows fed on corn gain more weight, which means they produce more beef per cow that can then be sold to the consumer.
- Most cows fed on corn are also confined to small feedlots in order for producers to more efficiently control their weight; grass-fed and finished cows are allowed to roam naturally on open pastures for their entire lifespans.
- Corn-fed beef has fewer health benefits than grass-fed beef.

When I was young my grandparents, both from Hawai’i, inspired my love for food. From them I learned to cook. From them I learned my culture and place. The contents of this package contain our family teriyaki recipe straight from the islands. Alaka’i, the name of my grandfather’s fishing boat, will open your eyes and lead you to true island flavor. Anthony Garcia & Steven Boddy
Anthony and Steven first met while attending the same high school in Southern California. Upon graduation they attended rival colleges where they both graduated in 2011, with Anthony earning a B.A. in Business Administration from USC and Steven earning his B.A. in Anthropology from UCLA. Miraculously they stayed friends through this hard time and after college Anthony went on to work with one of the largest independently owned craft breweries in the country based out of San Diego, while Steven entered the sports marketing world in Orange County. Through all of this they constantly kept in contact and their paths converged to start Windward Jerky Company in 2015.
Windward was born from a family recipe on Steven's side, a teriyaki recipe that his grandfather, Steve Largusa, would always bring to family events. And from 2015-2016 the two tested batches of homemade jerky to give (and after constant badgering from more and more people - eventually sell) to family and friends. They formally launched WindwardJerky.com in 2017, naming the company after the windward side of Oahu, the birthplace of Steven's grandma, Gloria. Right away they knew it was going to be a big hit! However, as they realized how much trash they were inevitably producing with conventional food packaging they opted to slow down production and marketing while they tested a new eco-friendly packaging for over a year.
Alas, that brings us here! Joining Anthony and Steven for the next stage of the Windward journey is Steven's cousin - Anthony Coleman. Yes, Steven still struggles with how to differentiate between the two while talking but Anthony (we'll call him Amp) brings more of the Largusa family, flavors, and story-telling to the fold to help push the next phase out to the masses. Q: Is Windward Jerky gluten free?
A: Yes, our jerky is gluten free and the grass-fed beef is free from antibiotics and growth hormones.
Q: Do you ship outside the United States?
A: Unfortunately at this time we are only able to ship our jerky within the United States.
Q: How do I select my flavors?
A: After the Kickstarter campaign is ended you will receive an email where you'll be able to choose your jerky flavors, if applicable to your chosen tier.
Q: When will the jerky be shipped?
A: We are striving to get all jerky shipped by December! We will keep everyone updated along the way.
Q: Do you use preservatives in your jerky?
A: We use all natural preservatives of vinegar powder, celery powder, and sea salt to keep our jerky fresh.
Q: How long will a bag of unopened jerky last?
A: We guarantee a one-year shelf life on all unopened beef jerky, from the day it was produced. You can find the expiration date on the front of each bag.
Q. If I back this project, when will I be charged?
A: [Directly from Kickstarter] If the project you’re backing is successfully funded, your card will be charged when the project reaches its funding deadline. If the project does not reach its funding goal, your card is never charged.
Some backers may see a temporary authorization of funds at the time of pledging, before a project has been successfully funded. Authorizations generally drop after a few days, but this process can vary depending on your financial institution. If you notice an authorization that doesn’t drop, we recommend that you contact your bank for more details about their authorization procedure.
Risks and challenges
We have already produced and shipped our grass-fed beef jerky all across the United States and we have worked hard for the past year and a half to ensure that our new eco-friendly packaging will work well with our beef jerky. With regards to fulfillment, we will strive to get all jerky out by December to our customers. Though there is a possibility of unforeseen issues that may pop up with regards to manufacturing, shipping, etc we will be fully transparent with our backers and communicate with everyone.
