OUR STORY - It all began with grasshoppers in suitcases...
We started Santo Remedio to share some of the incredible food you find in Mexico with Londoners, dishes that people living there actually eat - from its markets, street stalls, homes and celebrations.
The food we want to share is food that for us is a taste of home, and that in our experience had been virtually impossible to find in London. So four years ago we set about bringing back ingredients in our suitcases from Mexico - even grasshoppers!
We then got to work lovingly preparing our favourite Mexican dishes and started serving them at pop-ups, supper clubs - the first couple of which were basically only filled with our friends. But then people actually started buying tickets to come to the dinners we did and in 2016 we were able to open a restaurant for seven months in Shoreditch.
The response we received was something that far exceeded anything we could have imagined.

Our time in that space was short lived, but the support we have had since we closed has spurred us on to find a new location to open Santo Remedio as a restaurant once again in a new permanent spot!
OUR PROJECT - A Mexican Cantina in London
After a very long search pounding the pavements of London, we are delighted to have found a fantastic place for our new Santo Remedio Restaurant and Cantina.
The site in Zone 1 is perfect. It will allow us to seat more guests, prepare a greater variety of regional Mexican specialities and serve up more Tequila and Mezcal cocktails, as well as more of the little known but incredible Mexican wines from the Baja California region.
We want it to be the perfect place for people to enjoy true Mexican flavours, hospitality, music and feel like they are being transported to Mexico!
But the space needs some work and modifications so that it can be transformed into the proper Cantina and Restaurant that we are envisaging. And we would love for you to be a part of making this happen!

How your money will be spent
Half of the £40,000 we plan to raise will go towards building out our prep kitchen and buying a very important but costly piece of kit, a 20 grid Rational oven, and extraction hood.
This will enable us to slow braise the meats for our 12- hours slow cooked Barbacoa, Ox tongue, Pibil and other dishes -techniques essential to Mexican slow cooking. We will also be bringing over a Comal from Mexico to prepare Tlayudas, Quesadillas and Sopes.
The other half of the money will allow us to build an open kitchen, where guests can sit at the bar and watch our chefs prepare guacamoles, ceviches, tacos and quesadillas in front of them.
This is just like in Mexico’s taquerias and fondas, where you see your food prepared in front of you! It is something we would love to be able to share with our customers.
If we beat our initial goal we do have further goals. This will involve importing art work, decor and crafts from Mexico to transform the bar area in to a true likeness of the Cantinas and Mezcalerias found in Mexico City and Oaxaca.
The more we raise, the more we can spend on making the space a unique, vibrant and welcoming place.

More than just tacos, proper Mexican dishes in London
We will continue to prepare the Antojitos that are so synonymous with Santo Remedio and the streets of Mexico, which are so loved by our loyal customers. So expect more of our Mexico City style Carnitas and Octopus tostadas with Hoja Santa.
But we will now also have the space to prepare more speciality regional dishes that showcase Mexico's diverse and rich culinary landscape and traditions. Dishes from regions with rich culinary heritages like Oaxaca, Puebla, Yucatan.
And as always, we will make as much as possible from scratch with chillies, herbs and unique Mexican ingredients so that quality and flavours are never compromised.

We really, really care about serving the best Mexican food we possibly can
We are truly passionate about sharing the exceptional food Mexico has to offer with Londoners, which means we have gained a reputation for raising the bar in terms of authentic quality Mexican food in London. As such we have received both critical acclaim and a loyal following.
Edson's recipes come from years of spending time in his grandmother Mela's kitchen and a life time of travels across Mexico. His dishes are also partly inspired by his time at one of Latin America' s 50 Best restaurants, Casa Oaxaca with one of Mexico's most renowned chefs, Alejandro Ruiz.
Natalie's unrivalled appreciation for Mexican food comes from visits to Mexico all her life with the food being the highlight of every trip. There she would eat as many tacos as possible when her grandfather, who himself spent over 50 years selling tacos in Mexico City, would drive for hours just to take her to visit his favourite street food stalls.
Our Mexican heritage, years working in the hospitality industry and time spent running an extremely successful and profitable restaurant, means we feel we have the experience, knowledge and passion to create the best Mexican dining experience possible.

Risks and challenges
We will be taking on a space that has a bigger capacity than the previous space we operated and will be opening all day. As such we will face the challenges of running a larger operation with more staff, stock and production as well as a much more extensive drink offering in our bar.
We will have to continue to innovate and excite our customers with an offering that stands out from the competition and to ensure we maintain and build on the reputation we have already gained.
We want to prove that we can keep offering dishes, flavours and experiences that are new and different for our customers.
A note about rewards: While we will endeavour to ship physical items by the expected delivery date, we can not be held responsible for manufacturing or shipping delays that are beyond our control. Regarding rewards relating to meals at the restaurant: The expected opening dates are subject to contractors and receiving all necessary permits ahead of opening.
