Six months in + a big apology for the radio silence + free Margaritas
We are coming up to six months since we opened the door of our new space. It has been an immense pleasure to welcome so many of you and share with you the place you helped bring to life. It was great to host so many of your Christmas parties and share our new dishes and cocktails with those of you who came for lunch and dinner. Thank you for all your support and kind words on your visits that have helped to keep us going!
The past few months have been incredible, seeing our dream come to life, but also extremely challenging at times and very very intense. As many of you know, the last few months have been tough for many in the hospitality sector with rising food costs and hikes in business rates just some of the difficulties being faced. Interesting time to open a restaurant!
From a personal point of view we have found that recruiting staff has been immensely difficult compared to when we had our previous site. So we are very lucky to now be forming a loyal, dedicated and extremely hard working team who are an integral part of Santo Remedio. The costs of our chillies, herbs and other ingredients that we import from Mexico have risen by more than 50% along with many other costs. We even had our grasshoppers held up at customs!
There have also been some rather wobbly and at times chaotic services, with fire alarms that wouldn't stop ringing in a packed restaurant, tills crashing and staff walking out mid services among the "highlights!"
The sheer energy, effort and time running the restaurant takes means we have felt - pretty much most of the time - like there are simply not enough hours in the day to do everything we need to get done.
On that note we want to express how extremely sorry we are for the delay in getting many of your pledges honoured. The merchandise, classes, recipe cards and Holy Remedy cards will be with you (or booked in the case of the classes) within the next few weeks.
Thank you for your patience and we are so so sorry to those of you who have feel let down or ignored. This is the last thing we would want to do to any of our incredible backers.
For those of you who have yet to book in your meals please feel free to book them for whenever you would like, they have no expiry date. You can e mail firstname.lastname@example.org with your backer number and pledge details and we will get you booked in straight away. We would love to welcome you soon.
I will keep you all updated on when the merchandise is ready and post a link to the e-recipes when they are finalised.
We hope to host guest chefs from Mexico, launch our Sunday brunch and announce more exciting plans for 2018, which we will also keep you posted on.
In fact tomorrow, Thursday 21st February, is International Margarita Day, and we will be giving away some incredibly special Tequila Ocho Margaritas from 5pm to the first 50 people who come for drinks in our upstairs Tequila & Mezcal bar. Who knows who invents these randoms festivities, but if you need an excuse to drink Margaritas, then this must be it.
We also have a few spots left for a Tequila tasting with Jesse Estes, global brand ambassador for Tequila Ocho, also taking place tomorrow, at 6.30pm. Places are limited but please e mail me on email@example.com for availability.
