About

THE BACKSTORY

We are professional chefs/farmers/entrepreneurs who, 8 years ago, set out to share our passion for food, farming and cooking with new audiences. Since then, we have created several businesses – a catering company, a cooking school and as of July 2015, a café – to do just that. All of our endeavors source fresh, organically-grown ingredients from our own Saltbox Farm, and revenue from those businesses gets reinvested in the farm, allowing us to increase our harvests year after year and continue the longstanding agricultural tradition of our area. Along the way, beer-making has become a natural extension of what we do. Just like cooking, brewing allows us to think creatively about which ingredients and flavors to combine to create beer that will pair well with the food we like to cook.

WHERE'S THE MONEY GOING?

As part of our year-long buildout of our café, we included a small brewery space complete with rough plumbing and electricity and room for enough equipment to brew on a half-barrel system. In order to reduce up-front costs during our buildout, we opted not to purchase our equipment or inventory while we waited for approval of our license application. Now that we’re approved, we are ready to finish the brewery space and get down to making beer. This is where you come in. On our farm, we have already invested in the installation of poles for use in growing our hops, and are now focused on increasing our own hops harvests each year. A portion of your investment will go towards managing our hops harvests into the future. 

Here's a breakdown of our expenses - 

Brewing equipment: $18,000

General equipment - sinks & shelving: $3,100

Building costs - finish electrical & plumbing: $2,700

Farm infrastructure for growing/harvesting hops: $2,400

Ingredients for recipe testing and initial batches: $2,300

BEERS AND SUCH

Our beers will range from farmhouse ales to pale ales and IPAs, using many Saltbox Farm ingredients including grapes, hops, squash, melon, fennel, honey and spices. We will sell our beer exclusively at our café, for customers to enjoy with our food onsite or take home in 32 oz growlers. With distribution limited to our café, we will keep spending here in our local community. Our café and brewery space used to be the town’s Association Hall dating back to the early 1900s, a place for community entertainment and gatherings. By serving our own food and beer in our café, we will once again bring a central gathering place to our neighborhood. As with all of our businesses, we are mindful of our impact on the earth and our environment. We plan to use our spent grains to feed our sheep at the farm, and are excited to explore new ways to use the grains in our bakery for items like granola, breakfast bowls, brittle… so many cool options.

Risks and challenges

Our biggest challenge will be to execute on a bigger scale the beer recipes we have been making in small batches on the farm. The fact that we are deliberately starting small and only selling in-house significantly reduces that risk. Because so many of our ingredients will come from our farm, successful harvests will be key to our beers’ consistency. In the event that we require ingredients to supplement what we grow on the farm, we have existing relationships with other local farms so that we won’t sacrifice the quality of our ingredients.

For many new businesses, getting new customers is a key challenge. Because we have an existing customer base at the cafe, we already have demand for our beer. Our customers have come to expect delicious, farm-fresh food from us, and know that the beer will be no different. Not only will our beers be designed to pair perfectly with our food, but Saltbox will be the only craft brewery in our immediate area, seriously improving our chances for success.
