Aloha, welcome to my just-turned-4-year-old daughter and my wild Hawaiian guava project. Together with my wife, we live in the mountains here in Hawaii. Every fall, my daughter and I pick wild guavas from the mountains around our house and we make delicious guava jam. We are usually done right about Christmas time so guava jam has becomes our signature holiday gift. Friends and family love the not-too-sweet taste and its versatility as a topping (sandwiches, waffles, pancakes, ice cream, and anything else that sounds delicious with jam). And my daughter and I love making it, from the long hikes and acrobatic tree climbing to the mixing and jarring of the jam. It's daddy-daughter time at its best!

While we spend our summers as sustainability-focused commercial fisherfolk in remote western Alaska, we winter in in the mountains behind Honolulu, Hawaii (Manoa).  My daughter and I spend our winters hunting, gathering, and exploring across this amazing island state. We spend nearly every day together, with about 90% of our waking day dedicated to tramping around the mountains or roaming the reefs, and the remaining 10% spent cooking amazing food, much of which we have hunted, gathered, or grown ourselves. Although I won't be able to help my daughter with her math homework past grade 2 or 3 (math isn't really my forte), what I can do is spend as much time with her as possible and teach her the joys of wild food, exploring, and cooking. As a serial entrepreneur myself, this Kickstarter campaign is my way of sharing this joy with my daughter. 

Many of you may know us from our business Salmon & Sable, which I launched here on Kickstarter last spring with great success. This Kickstarter campaign is something different entirely––it's not a business, it's just a fun way to empower my daughter to share something she loves with the larger community.

We care about our food––what's in it, where it comes from, who produced it, all that. I guess we're foodies. Although we can't always grow, hunt or gather all our food, it's not for lack of trying! Just like the astoundingly productive salmon runs of Western Alaska where we fish, Hawaii is also brimming with wild food. In the fall, we pick wild avocados by the hundreds, bananas by the bushel, coconuts by the truckload, and our favorite, guavas by the backpack. All are wild and chock full of unique flavors, often not at all like their grocery store or laboratory-synthesized counterparts. 

Through the years my daughter and I have hiked hundreds of miles through these mountains searching for the best fruit and spices. It's not always as simple as just finding a guava or avocado tree, often that's not hard at all. What's difficult is finding the best ones. This is real wild food so one tree might make terrible fruit and another down the trail produces the best you've ever tasted. Rather than marking gas stations or even trails, my GPS screen is littered with blips for the very best guava, avocado, coconut, cinnamon, pepper, Surinam cherry, mountain apple, lilikoi, and other trees, vines, and bushes. 

But I digress. Back to guavas and the jam we make from them. We pick two species of guavas here:

For a month or more, my daughter and I have been picking guavas and we plan to pick for another month before guava season starts to slow down about Christmas time. We hike the trails and gather from our favorite trees and when the backpack is full, we head home to make our jam. First we wash each guava, then we blend everything lightly. We then add some Hawaiian sugar and a little lemon juice (natural preservative) while we lightly cook it. Next, we strain the seeds out and jar the jam in a boiling water bath, making it shelf stable. While the jars are cooling, we use our new special pattern scissors to cut fun Hawaiian fabrics to decorate the lids (this is my daughter's favorite part).

Because we don't use pectin, our jam is thinner than conventional sugar-laden store-bought jam. Although I am not averse to using pectin, I have found that without unreasonable volumes of sugar, the pectin doesn't work anyway. We prefer our jam this way since it's equally at home on PB & Js and on hot waffles or pancakes.

Of course you can use our jam any way you currently use jam (only with better results!), but here are a few ideas you may want to try. 

  • Guava Burger One of our favorite meals right now is a bread-less axis deer burger (we hunt them on Lanai). Bison is the next best thing. Make your burger and grill it. Sauté cherry tomatoes cut in half with garlic and fresh herbs. Place the cooked burger on a bed of whole butter lettuce leaves, spread the top of the burger liberally with strawberry guava jam, place a few pieces of bacon on the jam, place a big spoon full of the sautéd cherry tomatoes on that, sprinkle with blue cheese and serve.
  • Guava Glazed Pork Loin
    Use our guava jam to glaze a pork loin in the last 10 minutes of cooking. Or for something a little more complex, try this recipe on the Food Network.

  • Salmon
    It sounds crazy but almost anything sweet is delicious with salmon. Spread some of our jam on a salmon fillet then grill or bake it to perfection. You can even get your salmon from us at Salmon & Sable!
  • Guava, Crackers, and Cheese
    Just add a small dish of guava jam to your cracker and cheese plate. We like it with Manchego!
  • Ice Cream
    Pour some of our jam over vanilla ice cream and watch a great movie. Wow!

Since we have already made some jam, we will prioritize Christmas orders first and ship those within a few days of the campaign ending so they should arrive in time for Christmas. We plan to ship Christmas orders on December 15. However, delivery on or before Christmas is not guaranteed. My daughter and I will wrap the jars individually with tropical themed wrapping paper with a ribbon on each end and place them in the packing materials inside the flat rate box.

Other non-Christmas rewards will ship in December and January. While some may arrive in December, most will likely arrive in January.

We are sending all rewards in USPS medium flat rate boxes packed very well with recycled materials including Honolulu newspapers. My daughter loves wrapping and packaging so this part will be fun!

Each jar has a colorful Hawaiian print cloth with textured edges under the band. A small sticker provides ingredients, volume, etc.

We decided to not ship outside the U.S., sorry! The cost is just too high. In most cases the cost of international shipping is 5 and sometimes 10 the cost of the jam!

Local pickup will be available in Manoa Valley, Oahu or a mutually convenient location.

Risks and challenges

Although this is a small project meant to be fun for my daughter and I, as well as to put amazing wild jam in your hands, there are a few challenges to consider and perhaps a few we'll stumble blindly into later. We do have 200 8 oz. jars on hand, but we have had trouble finding a good source for jars. If this project expands past 200 jars we may offer new rewards with a later delivery date to allow us time to source more jars.

The last potential hurdle is guava supply. However, we are already in production for this project so I anticipate being able to stay ahead. Additionally I am limiting the number of rewards so we don't over-extend ourselves. There is always the chance that some customers might not be able to get some of both types of guava jam (the yellow and the strawberry) due to a shortage of one or the other. But both are delicious and we'll do everything we can to avoid that.

We're also experienced Kickstarters. Last spring I alone managed the launch of my business Salmon & Sable right here on Kickstarter. It was a huge project and I'm happy to say that we raised $102,000 (Thank you backers!!). I am confident I can manage this project and delivery promptly. And with my daughter at my side there is nothing we can't do!
