About this project
OUR GOAL : Revolution Bakery is excited about providing 100% gluten free bread to stores across the country. To do this we plan on expanding our bread-baking facilities, and adding all the equipment needed to produce bread on a large scale. This includes larger ovens, mixers, proofers, as well as all the miscellaneous things that make a bread baking operation successful. We will expand our bread packaging, and labeling equipment as well as add lab services to ensure that our bread remains fresh when we ship it to stores around the country. Kickstarter funds will also be used to pay for nutritional labeling and barcodes all of which are needed get our 10 varieties of gluten-free bread into a store near you!
Revolution Bakery was started in November 2011 out of the desire to make fresh, great tasting gluten free baked goods for the community. In order to avoid the possibility of cross contamination we became New Mexicos only 100% gluten-free bakery. Today we offer artisanal gluten-free breads, cakes, pies, muffins, cookies, cupcakes, coffee cakes, brownies, scones, gluten free flour mixes, and more to take home or enjoy in our bright, airy dining room,
We are committed to using only the finest, freshest ingredients, with no added preservatives, artificial flavorings, stabilizers or chemicals. All of our breads and baked goods are handmade, hand rolled and hand cut in-house everyday to provide the freshest 100% gluten free product.
Our gluten-free breads contains all of the ancient grains that people want to eat for healthful reasons. We're not just using brown rice, corn starch and potato starch to make a loaf. We use healthy and delicious bases, from buckwheat and millet, to quinoa, sorghum, almond meal, coconut meal, cornmeal, gluten-free oats and pumpkin seeds, We use whole nuts and grains to make the base of our flours. Revolution Bakery's bread selection includes vegan breads, sugar-free beads, Paleo breads, artisan loaves, breakfast breads, sandwich breads, baguettes, focaccia, pizza dough, rolls and hamburger buns Here's a short list of our gluten-free breads:
Sandwich loaves white, multigrain, vegan buckwheat, millet quinoa
Breakfast loaves cinnamon raisin, cranberry raisin, muesli
Artisan loaves ( all GFV ) sour dough, seeded, kalamata olive, Santa Fe green chile, cranberry walnut
Our Paleo ( all with egg, but GFDF ) white, dark, muesli, herbed olive
Within a few months of opening we started having requests from people who were traveling through to open a store front in their town so they could enjoy our gluten-free bread as well. It soon became apparent that the best way to accommodate all the requests was to have our bread delivered to stores in their towns. With a true passion to promote and distribute the gluten-free lifestyle we realized that sending our bread out to stores across the country would allow every community to experience just how good gluten-free bread can be.
We acquired the spot next door to set up the new operation and then found kickstarter to spread the gluten-free reality across the nation. Whether you are gluten intolerant or you just realize the benefits of eating gluten-free products we hope that you will support us in our new venture. Risks and challenges
Similar to many Kickstarter projects, we face several key risks and challenges in sparking this GF Revolution. The primary risks for us include:
To achieve the great tasting gluten-free breads you expect, we have had to test dozens of different and unique flour combinations as well as the "wets" that make up our breads. We have taken two key steps to ensure our baking success. 1) We have formed an amazing team of bakers and prep staff who have a true passion for gluten-free baking 2) We tested batch after batch of bread to come up with the perfect gluten-free bread. In the last year, we have created countless recipes and flavor ideas to come up with a bread line that can be paired with any occasion, and then selected only the best to be mass produced and shipped out.
SUPPLY CHAIN AND LOGISTICS
Many Kickstarter campaigns can encounter problems when taking their products to production. This includes issues finding suppliers and distributors for mass-production. Smooth execution is absolutely essential to overcoming such risks. We take this lesson seriously and have been working for months negotiating with suppliers, testing component quality, and building a team that can execute on our promises. Our plans are neatly in place, and we now mainly require the resources to execute them.
Finding the right people is a challenge for any endeavor. Success in gluten-free baking requires a team of talented, passionate, and motivated bakers, prep staff and entrepreneurs. We have already formed a truly awesome (and fun!) team, but we will have to bring in more revolutionaries to realize this dream.
