Hi! We’re Damian, Jessica & Izzy, and we are launching Chicago’s very First Pierogi Wagon Food Truck!
We both grew up working in the food industry doing everything from bussing tables to serving in fine dining establishments to managing high volume concessions. Throughout those years, we developed a deep passion for food and a love for the service industry (We even met while working in the same restaurant).
Our independent spirit led us away to open our own business, a successful marketing company. But we’ve grown to miss the vigor of the bustling food industry and are ready to step back out of the office and onto the streets of Chicago to offer up steaming plates of delicious Pierogi.

Pierogi have always been close to our hearts. Damian grew up in Poland, where Pierogi were a dinner time staple and they were a Christmastime comfort food during Jessica’s childhood. Pierogi are also a much loved part of Chicago heritage and we’re excited to bring it to the streets!
For those who are unfamiliar, Pierogi are dumplings stuffed with any one of several fillings. They are usually boiled, then seared; tossed with bacon, onions and butter, and served with a side of sour cream for dipping.
We’re taking the traditional Pierogi and creating delicious artisan dips to make them even better. They’re great for a quick lunch, an easy to-go dinner, and the perfect late night bar food.

It is our plan to continue to evolve as the seasons change, offering new dips and, eventually, new and imaginative Pierogi flavors like bacon & egg, corned beef & kraut, and even chorizo!
We will also always offer seasonal salads, a soup de jour in the winter, and of course warm and cold drink options.
Let’s Talk Money
Where’s all this money going to go? Well, to convert a diesel step van (which we already have) into a food truck! And to pay the hefty new licensing fees to become a City of Chicago Food Truck. We’re building this baby ourselves with the most economical (but reliable) equipment available.
This includes purchasing pre-loved refrigeration and freezer units, a flat top grill, a stove for boiling our delicious Pierogi, a steam table, a stainless steel prep counter, a fire safety hood, a sink, electrical and water systems, and pots & pans and utensils.
If we raise more than the 15k, we will hire additional labor to help us get on the streets sooner. If we collect even more extra cash and reach our stretch goal of 25k, we will invest the money into opening a storefront (Just envision it: a PIEROGI BAR!).
There’s a lot to get done and every single backer moves us closer to our goal, so we really appreciate each and every pledge!
Just so you know, your credit card is only charged once our project is successful. So if we fail (which we won’t!) you don’t lose any money. Also, amazon and kickstarter fees add up to about $1500 of our collected funds and taxes will also take out another $2000 or so. We’d love to make a little extra to cover these costs.
We’ve done our research. We’ve been out on the streets and been spreading the news on Twitter and Yelp, asking for opinions. The response to the Pierogi Wagon has been overwhelmingly positive.

Risks and challenges
We are prepared to take on the challenges as they come. It's possible that our timeline may be slightly delayed if we run into obstacles with outfitting the truck or with the city permits. As setbacks arise, we will conquer them one by one.
Given that we receive enough funding, we will definitely successfully complete this project and the Pierogi Wagon will soon be roaming the streets of Chicago. That is a promise!Learn about accountability on Kickstarter
We are planning on including ten pierogi in each portion. We are also working on including a sampling size.
The cost of one regular portion will be $8, including taxes. We want to keep the money handling easy and simple. We will be accepting cash as well as credit cards via Square (we <3 Square).
Our pierogi are vegetarian, but not vegan (except the ones that obviously include meat, like beef).
We will be using eggs and butter in the preparation (but definitely NO animal based shortenings, gelatin, etc).
Of Course! We'd never use anything that contains hydrogenated corn oil (or anything else fake for that matter).
Absolutely yes! Our pierogi will be made using high quality ingredients according the recipe from our 100% polish grandmother. They're pretty amazing, if we do say so ourselves!
We'd love to be all over the city, expanding upon already created food truck hangouts and finding new ones.
We're really hoping to spend some time in places other than the loop. One of our biggest plans at the moment is to work with the city to set up a spot on North Ave beach, but we'll see how that goes ;) We'll visit all the major colleges in Chicago & we'll also be out at night on Clark St doing some bar-hopping, and by the Zoo on the weekends and at whichever festivals are possible this summer. We would love to come out to the suburbs, if we're invited!
Yes, we are planning on cooking on board to ensure the freshest, tastiest possible Pierogi. We will also be using a separate kitchen space to do most of the prep work as well as store our inventory.
Yes and no. It if was easy everyone would be doing it. On the other hand, the City of Chicago is now more amiable to food trucks and willing to work with us to make it happen. After numerous visits and consultations, we have determined that it is very possible for us to become a cook-onboard licensed food truck.
The reason that most trucks that applied for the permit didn’t receive it is because they never followed up with subsequent required paperwork. I am confident that our operations are compatible with the City of Chicago rigorous health and licensing requirements and we will have no issues in obtaining the necessary permits.
The biggest reason that it is so difficult to obtain the food truck licenses in Chicago is the health related requirements. This is GOOD for you and protects you from unsanitary and potentially dangerous food and hazardous conditions.
We are outfitting our truck with kitchen equipment from scratch, which allows us to fully comply with high city standards. We are keeping it simple by incorporating minimal equipment that is both approved and safe for use on the food truck. We are working closely with the city and health inspectors on continuous basis to make sure that we are building out the truck according to their guidance to prevent unnecessary delays.
Food trucks are indeed not allowed to park within 200ft within other food establishments and we are planning on strictly following that rule. There are also rules about parking on residential and private streets. We are well aquainted with the laws and plan on following them. Parking is otherwise allowed anywhere in the city. There are the new designated food truck parking spots that we also plan on visiting. Though the Chicago food truck laws do present a challenge, there are over a hundred food trucks thriving on the streets of Chicago, and we are confident that we will as well.
We are currently working out the details of our catering plans, but we will definitely be offering a large range of options to suit your needs!
Why should I believe that you’ll be able to actually get the Pierogi Wagon running, once you’re funded?
I have successfully run the multimillion-dollar high volume concessions and café department over several years at the Park Grill in Millennium park. In addition, I have managed many high volume summer food festival events as well as restaurants and bars.
With a strong operational background, a lot of marketing experience, and a wide network of restaurant related contacts, I am confident that I am the right person to run a successful food truck.
