The Back Story...

Fact: 99.9% of restaurants that have escargot on their menu, received them in a can, from France. Why? There are simply no other options available. Chances are, if you've had escargot in a restaurant, it came from a can. Don't believe us? Google search "Fresh Escargot". You'll see...

While planning a menu item destined to include escargot, it was this realization that led Taylor Knapp, chef and lover of unique foods, to begin searching for a solution. Why isn't there fresh, local, escargot available? The answer still isn't clear...

With loads of determination, and a little bit of crazy intuition, Taylor teamed up with North Fork real estate guru and entrepreneur Sean Nethercott. The two shared the same vision for the company: 

A locally focused, community driven project that could change the way the world eats and experiences escargot.

Introducing: Peconic Escargot

Taylor and Sean are raising funds to build an energy efficient, sustainable greenhouse operation in beautiful Cutchogue New York, on the North Fork of Long Island. It will be, once completed, the only escargot farm of its kind. For months, they've been working with the Peconic Land Trust and the USDA to ensure that it is a viable project for both the North Fork of Long Island and the restaurant and home cooking industries.

How are other snails raised?

Most of the world's snail farms are located in France, some in Italy, a few in Asia. They all have one thing in common. They rely on a centuries old technique of raising the snails in outdoor, open air pens. This approach is outdated, unrealistic, and potentially dangerous. Being out in the open, the snails are subject to parasites and fungi that can attack and spread rapidly in a crowded pen. The same snails that are raised for food are agricultural pests that can cause considerable crop damage. In addition, the open pens allow for possible predators including mice, birds, and even other insects. Not to mention the potential for Mother Nature to wreak havoc on a completely exposed snail population.

We began to consider raising the snails indoors to provide a more safe and consistent environment. All sources suggested that the farm be built in a basement or underground enclosure with florescent lamps and water misters to mimic the outdoors. But that just doesn't sound very nice, does it? 

Enter: The Greenhouse. 

A perfect, contemporary melding of the two old techniques, never before applied. The greenhouse will be a completely enclosed 18 x 36 foot space with fans for fresh air, humidifiers, heaters, and air conditioners. We'll literally be able to control the environment. And don't forget the sunlight. Lots and lots of beautiful sunlight.

Because of the sealed nature of the structure, the snails won't be able to get into nasty situations with the nearby farmland - which is incredibly important given the abundance of North Fork agriculture. 

On the flip side, the snails will be protected within the greenhouse from predators and the weather. Snails require an incredibly specific temperature and humidity to really thrive. We'll be able to provide them with exactly what they need. 

All of these factors are essential, while still allowing the snails to live in a clean, fresh air, sun soaked little ecosystem. 

Tell me about the escargot currently available.

Snail products currently on the market are really a disgrace when considering the advancements that other foods have enjoyed. Snails have been canned and frozen since at least the 70's and the products available remain unchanged to this day. 

The canning process involves high amounts of heat and pressure that all but destroy the delicate nature of the snails. They become flavorless bits of chewy rubber. Anyone that's eaten escargot lately can attest to that. In addition, the snails are often canned with preservatives and excess salt.  Ingredients that really don't need to be in a fresh product. 

If the snails aren't canned, they're frozen. A process that sucks all the flavor right out of them. When the escargot is thawed, all the precious moisture is lost, leaving the snails dry and uninteresting. Yuck.

Today's snails are also fed quite the unhealthy diet. Often, their meals consist of table scraps and rotten vegetables. They are finished on cornmeal or other high starch grains. This finishing technique produces a larger snail, but diminishes the animal's delicious natural flavor and texture. You can liken it to beef finished on corn or grass - we all know what the better option is.

How will your product be different from others on the market?

Peconic Escargot is determined to offer a superior product from conception to the dinner plate. Our snails will be fed a healthy diet of locally foraged greens and herbs. All organic, GMO free, and natural. 

Peconic, in addition to the Peconic Bay that the farm land will sit near, refers to a Native American word meaning "nut trees", which happen to be abundant in the area. We're toying around with the idea of finishing the snails on foraged nuts and acorns, much like the famed Iberico pigs of Spain. How cool is that?

After the snails live a long and sunny life, they'll be packaged into clean vacuum sealed bags. These will preserve the flavor and texture, while allowing us to ship the snails anywhere in the country - and eventually, the world.  The escargot will be shipped overnight to you, or hand delivered if you live in the area. Our escargot will NEVER be canned or frozen. Ever.

Kickstarter works on an "all or none" basis. If this project isn't fully funded by the end date, we'll ALL be stuck with gross canned snails forever. And that's just sad.

What will the money be used for?

An excellent question! The money you help us raise will be used for tons of things that we wouldn't have been able to otherwise afford. Like...

~Live Helix Aspersa snails to begin the breeding process. We're going to start with about 1,000!
~An 18'x36' Greenhouse, complete with heaters, humidifiers, and fans. This will be our largest cost by far.
~Fresh, nutrient rich soil. We'll need lots of it!
~Instruments needed to measure the greenhouse environment. Thermometers, soil water meters, and hygrometers.
~Costs of leveling the ground and laying concrete for the base of the greenhouse.
~Shelving.
~Work Tables.
~A cryovac machine for vacuum sealing the finished escargot product.
~Land lease for the first year.
~Covering costs for all these cool rewards.
