Who Are You?

Hello I'm Chef Jasmine Colleen & i'm the owner & creator of Navge Vegan Gourmet. I'm 26 years old & I'm looking for funding to help with the start up cost of  (NA-CH) Navge Vegan Gourmet.(Located In the North West Area Of Houston, Texas.) I grew up in the kitchen, & I've always loved cooking so much that at age 14 i made my first full Holiday Course. Employment wise I've been in the restaurant industry since age 16 i & have worked in every aspect from Serving to Bar tending to Line Cooking, to Hospitality to Managing & Marketing. After working for other people for years & attending Le Cordon Bleu, I'm putting that same 100% into my own vision Navge Vegan Gourmet. I currently run a food page via Instagram @ChefColleen.

Why Start A Vegan Restaurant?? What about the non Vegans?

I live by the quote "I don't sell, what i wont eat myself." I love Vegan food & but after visiting the 3 Vegan Restaurants we have in Houston i came to the conclusion that they don't offer the most tempting options & i shouldn't have to sacrifice flavor for eating healthy. SALAD is not the only thing people eat on a plant base diet! Don't get me wrong we offer salads as well but we're humans too. & Since competition for Vegan restaurants aren't high i feel like this is the perfect opportunity for me to bring a new improve Better outlook on vegan food to the market. I'm very innovative when it comes to creating delicious vegan recipes. Due to traveling many places & experiencing many cultures I've been able to put my vegan twist on a lot of modern recipes & i look forward to sharing that with the community of Houston.

When people ask what about the (Non Vegans?), they're usually feeding into the stereotype that most vegan food is bland, & unappetizing. But I'm here to give you a new outlook on that. For example for Breakfast we're offering our Classic French Toast & Our Apple Pie Stuff Waffle, The only thing that's changed in the original recipe is that there are no eggs or milk. I'm here to show you that its` replaceable & so mouth watering you wont notice the difference. & For Lunch we're offering our Apple Wood Smoked Sausage & our Beyond BBQ Burger, with the meat substitute inventory from The Beyond Meat Company & Field Roast. Which they started serving the sub meat in a ALL MEAT Burger Place & it got so popular they now extended the same service to grocery stores, & Restaurants like mine. If it out sold a regular beef burger then i'm sure it will win over my fellow carnivores.

Do you have a location?

While looking for locations for to calculate the estimate start-up cost for Navge i came across a Bakery not to far from my house, in the North West Area Of Houston. As i walked in i was met with a older guy who explained to me that he's just tired of working a bakery. As i look around to what he felt to be a lost cause,i seen HOPE for me. From the seating, to the full range kitchen all that's needed is some TLC. Imagine this place with fresh coat of paint, updated decor, few days of deep cleaning & its ready to serve food. At the end of the conversation i was surprised to find out that the rent is affordable & its Turn Key Ready, But i can't do it it without YOUR help. Its not very often an opportunity to lease to a restaurant comes along & i'd love an opportunity to bring my vision to life.

What's the Plan?

I'm aiming to open Navge this Summer for Breakfast & Lunch 6am to 4pm daily. Navge offers quality Interpretations of Classic Vegan Dishes with a Modern Twist & with our seasonal menu changes, we look forward to jumping into the daring uncharted territory of Vegan food. Beverage wise we'll offer Coffee, Tea, Match, Lattes & our Navge Sweet Water. (A 100% Natural Juice, Created By Me that will marketed to local groceries in the future.) All Of Vegetables, & Fruit Will Be Local & by working with our Local Farmers our $ stays within our community generating twice the income for the local economy. All of our Vegan Breads, Sweets, Sauces, Juices & even our Bacon is made in house fresh everyday, to assure you that our products are 100% Natural, NON GMO, & Cruelty Free. All of our herbs & edible flowers will be grown in our small garden off site, which helps cut down inventory cost substantially.

Navge's interior, designed by Navge’s Team reflects the sensibilities of the Millennial’s & Centennials of the surrounding area while also paying tribute to Houston’s True Legacy. The combination of Bright/Cool Colors Lots of, Modern Artwork & enjoying delicious vegan gourmet,while listening to Smooth Creole Jazz is sure to make each visit Instagram-able. Combined with our fast food like service & family like customer service. Navge offers the choice to observe passers-by with our outdoor seating, or inside seating where you can enjoy the modern art, great food & cool setting. Since the location is turn key ready i just have to personal touch & bring it back it life. Which makes the opening process a tad bit easier.

I'm using Kick Starter because i want to avoid going into debt. Since this isn't a massive restaurant it would be unsustainable to pay off multiple loans & profit as well. That's where your help comes in. This is the only crowdfunding source i'm using, although i'm in the talks of introducing my project on the local A.M. news. I'm also applying for a small loan to cover inventory, uniforms & decor. 

I'm asking for 50,000 but ANY donation amount is appreciated. $47,000 will go towards Securing the location, 1 year in rent & remaining funds with go towards Permits/Licenses. We're aiming to open in the Next 3-6 months, since we have found a location that's currently available & is TURN KEY READY! I look forward to bringing Navge Vegan Gourmet to life. Risks and challenges

The potential risks i came across varies as in:

. Restaurant Damage-Houston does go through rainy winter, hurricane & tornado season. I plan to apply for a full coverage insurance, While offering Vegan Options Of Classic Winter Food & Events to Keep the Foot Traffic Steady & Profitable.

.Restaurant Traffic/Marketing-there's always a thought like what if no one comes? Between the Social Media Marketing of Fb, Instagram, Twitter, You tube & the Local Marketing as in Radio, News, Local Markets & events will always be able to keep the people updated & interested.

.Financials/Over Spending- I've learned that even when you don't plan to overspend things come up, so if i can save money on Anything vs spending it, I'm gonna do it, that's my main reason for making so much of my items in house. Why spend $8 bucks on 2 loafs of Vegan bread when i can spend $ 9 on ingredients & make 10 times more bread? I have my mind on delivering fresh yummy profitable food.
