The Vision

New Haven is ready for a new kind of learning AND doing space. We’re building the Luck & Levity Brewshop Fermentation Center: a kitchen space for educational workshops, events, and classes that empower people to make their own food products and share them with family, friends, and neighbors. For a full year, The Luck & Levity Brewshop has operated as New Haven’s only homebrew & fermentation supplier, and as our city’s epicenter for information about DIY food production. Our tiny community lounge space has become a popular spot for all types of gatherings from business meetings to beer tastings and parties.

Throughout this year, the folks coming through our doors have told us the same thing again and again: they want to connect with their local community, and they want to improve their food independence. We’ve heard loud and clear that people in the Elm City are enjoying DIY food production at home, but that they want MORE. They want to connect with others who are home brewing, making pickles, canning veggies and whipping up home made jam. They want a place to gather together and grow and share their knowledge through a community kitchen that offers workspace, classes, and events. We are responding to this need. We are building Connecticut's first, and only, community and workshop space for fermentation & DIY food production at the Luck & Levity Brewshop.

Making it Happen

The Luck & Levity Brewshop is profoundly committed to supporting the strength and resilience of our community through a local and sustainable business model. It is only fitting that we are NOT approaching a mega-bank or a far-away investor to help make the Fermentation Center a reality. The Fermentation Center will be a space created for our community, BY our community. So, we’re approaching YOU. Back this project, and you’ll help create a community-focused enterprise unlike anything New Haven has ever seen.

The Fermentation Center

The Fermentation Center will include a commercial kitchen space that you and your friends and neighbors can use to work on DIY food products. The kitchen space will also host classes and workshops by Luck & Levity staff, local culinary gurus, and community partners such as City Seed. We’ll continue to offer a lounge area for gatherings and tastings and a well-stocked shop with all the supplies you need to make your wildest food-making dreams come true. 

If you can help us reach our stretch goal of $60,000, we’ll also create Connecticut’s first Ultra-Local NanoBrewery. That is, a brewery run out of Luck & Levity that relies on local brewmasters and distributes only to locations in Greater New Haven. This means you’d be able to walk into a store and buy great local brews produced by people in your own community!

The Fermentation Center (and, hopefully, the NanoBrewery) will continue the look and feel we’ve aspired to in the current shop an lounge: a mixture of farm and industrial aesthetics, combining stainless steel cooking surfaces with wood and earth tones throughout the space. 

Our Team

The Luck & Levity Brewshop is owned and operated by Scott Vignola. But, the shop wouldn’t be possible without the time and resources from a team of community members. Below is a list of a few folks who’ve helped make this shop possible. Our Mini-Stretch Goals

  • $22,500 {Dynamic Lighting} After hitting our $20k goal, we’ve decided to set an additional mini-stretch goal of $22,500. The $2,500 will be allocated to improving the lighting at the Fermentation Center. This will provide a better learning experience through spotlighting and will help us showcase the kitchen and our learning events to folks passing through town.
  • $24,000 {Seating & Meeting Space} We’d like to create an area for folks to sit and discuss what they are working on or for events. At the moment, we have a wonderful lounge area, and with another $1,500, we can put some finishing touches on a space that can include some great seating with the same feeling combining warmth and industrial we’ve already created at Luck & Levity.

Risks and challenges

• As with any construction project, there could be unanticipated delays or costs. Our contribution goal gives a small a cushion for those costs.

• Because an enterprise like this does not operate in New Haven (& we believe, never has), there could be other uses the community desires which we have yet to hear about. One of the reasons we are using Kickstarter, instead of pursuing the route of an SBA loan, is to engage our community and supporters. This will, in a fashion, prove the concept before launching.

• Our delivery dates for our event and class rewards are more like launch dates. We’ll work with you to determine a date that will fit your schedule. For example, a private party could occur next Spring if you preferred.

• Determining the pricing of products and services is one of the most difficult (and critical) aspects of running any business. Because this concept is as yet unproved or untested, it will likely take us a few months to determine an effective pricing model. In other words, by contributing to our project today, you're receiving a great price now. If you wait until after we have launched, you may find our prices have changed or that we aren't offering a perk you find here.
