Grind, a gourmet burger truck to be located in Louisville, Kentucky has plans to open late Spring/early summer this year. With a focus on local ingredients and using the best quality meat and cuts to achieve an enviable blend for our burgers, we’re excited to bring this new venture into a city such as Louisville which is known for supporting unique and well-executed dining endeavors. I’m Jesse Huot, a current culinary student who has always been interested in food. I love cooking for people. My interest stems from watching my father cook as a child and the attention to detail and quality that became engrained in me. I apply that now in the food I cook as an adult. My wife, Liz, also grew up in a family where food was very important and despite being a vegetarian for many years she was always adventurous when it came to trying new things. This allowed her to develop a unique palate which she was able to use to help me, as someone who rarely made a meal that didn’t include meat, learn to create really delicious vegetarian and plant-based dishes.
Straying from what a typical burger place has to offer will be what sets us aside from the rest of the pack. Besides the standard burger with its 1/4lb meat patty, cheese and veggies you can expect to find one influenced by Spanish cuisine featuring peppers, goat cheese and an olive spread with a few special ingredients that will change the way you think about a burger. Bison, lamb and tuna will also make appearances on the menu and with lots of ad-ons available including several house-made sauces, fried eggs, pork belly and wide variety of cheeses. Customization will be interesting and fun. In addition, there will be a seasonally rotating menu of specials where you will find items that you may not expect to see on a food truck like handmade pastas, salads, pot pies, and chili.
Eventually we would like to open a brick and mortar location and we’re hoping that successfully running this food truck will allow us to do that at some point in the future. Your pledges can help us take this first step towards our lifelong goal. Since we wanted to make sure that everyone who donated walked away with something, we’ve made our pledge rewards things that we thought people would really enjoy.
As of now, we’re halfway there. We have the trailer, the flooring, the wall panels, some of the equipment and most of the plumbing. We still need the rest of the equipment, permits from the city, diagrams to make us compliant with city regulations and the smaller odds and ends to make the truck complete.
