We're fundraising this Fall to help furnish a community patio in front of our forthcoming Mill Valley Le Marais Bakery café at 250 East Blithedale. We have some amazing thank you gifts, with pledges priced at retail value — Thanksgiving pumpkin pies for pick up, baking mixes, holiday gift baskets that we'll ship for you with custom notes, frozen bake-at-home croissants, a croissant making master class, our opening dinner party, and more — and we'd love to have your help in making this another beautiful gathering spot in Mill Valley. Decorated with a distinctly Parisian feel, our plans include rattan French bistro chairs, Fermob Bistro chairs, benches, and tables, umbrellas, and heat lamps.

Le Marais Bakery and Café is a local French family-owned bistro, serving flavorful, healthy, local "Parisian soul" food (EaterSF) and French Roast coffee to the Bay Area community. Our three San Francisco cafés (498 Sanchez, 2066 Chestnut, and 1138 Sutter) are inspired by boulangeries and buvettes owner Patrick Ascaso grew up eating at in France, where he was raised to believe that you do not need a lot of ingredients to make great tasting food if your ingredients are good. We have an amazing team, a very talented group of pastry chefs, and we're a family business built on local values, sustainability, and community. 

Now as we are growing, we've hit some stumbling blocks that have delayed our Mill Valley build, more than even a thriving small business can handle alone, and we could use some help outfitting this patio space, so we're offering thank you gifts that can be used to redeemed at our current cafés, pay ahead for Mill Valley meals, or send as a gift to yourself or a friend across the country. If we go over our funding goal, we'll be able to add a new pastry case, more finishes, furniture, Parisian photography for the walls, and signage -- every dollar raised will go towards our Mill Valley location.

"You’ll find all things French and scrumptious here.” — Food & Wine 

Our menu reflects our love of California crops and French cuisine. Our pastries, croissants, danishes, kouign-amann, scones, muffins, and breads are made the traditional way, using freshly milled organic flour, natural levain, and lots of European butter, baked fresh every morning. We make our granola and jams from scratch; our coffee is dark roasted from the freshest green beans in a collaboration with Verve Roasters. 

Produce comes from local fields just a drive from our bakery, grown by families we count as our friends; our soups, stews, and sauces are based on the recipes Patrick's mother and grandmother taught him. Day-long offerings of French fare include our popular choose-your-own brunch boards and bowls, salads and sandwiches, avocado croissant toast, organic rotisserie French chicken and prime rib, vegetarian French Onion soup, shakshouka, merguez, boudin blanc, Monterey Fish Market smoked fish, duck confit, cheese raclette, as well as french toast and Croque Monsieurs et Madames made with our own fresh baked pain de mie.

We’ve been incredibly lucky to partner with Williams Sonoma to share our pastries with customers across the country, and just down the street through Caviar Delivery. We've been be featured in publications like Food & Wine Magazine, Condé Nast Traveler, and Eater SF, have been awarded the Best of the Bay and been listed among the Best Bakeries in the U.S.

Making our way to Mill Valley...

Mill Valley has always been our most requested spot to expand to, and when we first found our new location at 250 East Blithedale Avenue back in 2016, we knew it was perfect, a light-filled dining room, large outdoor patio seating area for the café, lots of parking, located on the main thoroughfare from downtown Mill Valley and Hwy 101, convenient for locals and weekend bikers and hikers like bakery owner Patrick, his wife and daughter. The space has all the character and charm we've found in our other locations, large windows and beamed, barrel-vaunted ceilings. We spent the past two and a half years getting city approvals, design, and now are well on our way in construction. 

In our first 5 years in business, after opening our café in 2013 at 2066 Chestnut Street in SF's Marina, we made hundreds of pastries every day in a 300 sf kitchen. In 2014, we started a commissary kitchen project at 1138 Sutter in the Lower Polk/Tendernob neighborhood, a 3,000 sf croissanterie where customers can see our pastries being made by hand. With planning delays and costly set-backs due to the building's outdated sprinkler system, the commissary took 4 years to build, opening late last year. Back in 2016, when we began the Mill Valley project, we could not have foreseen the sprinkler issues and based this budget on the cafés we successfully built in city, first in the Marina and then in the Castro at 498 Sanchez, but many aspects of the Mill Valley project have proven to be more expensive, like our HVAC bids that came in nearly six-figures higher than we had budgeted. 

As a small, local business, we have a personal commitment to paying fair wages, sourcing organic ingredients from local family farms, and making our recipes from scratch. We use recycled paper goods, compostable packaging, and try to have as little impact on the environment us as possible. Your generosity will help us cover our patio furnishing costs, helping us bring more local jobs, locally made croissants and classic French cuisine, French roast coffee, and opportunities for gathering together to a new community.

Risks and challenges

Risks and challenges related to the opening of a new café location are often related to the cost and timing of contractors, as well as approvals from the city. We already have our city-approved architect plans, and we are well on our way in the building process, having completed most of foundation work, plumbing, electrical, and framing. This is a new town for us, so it is difficult to estimate how much longer the project will take, though many of our rewards can be honored at our other café locations at 1138 Sutter Street, 498 Sanchez in the Castro at 18th Street, and 2066 Chestnut Street in the Marina.
