About

From “The Essential Knives” to “The Energetic Knives”

Our first Kickstarter was the creation of our favourite essential knives - the Gyuto, the Petty and the Bunka. Three essential knives. Three favourites.

Our second kickstarter is different. You don’t need these knives if you have the essentials, you will be able to get by. However you will want these knives! These knives bring the flair, fire and fun to the kitchen. We are crafting "energetic" knives that are fundamentally different than most western knives. Knives that few have in their kitchen, yet when you do you will wonder why you haven't always had them.

You don't need a Porsche, but driving one will put a smile on your face.

Our Handles

We have been out fossicking through the country side again in the beautiful wine region of South Australia, McLaren Vale with our arborist mate to find more interesting woods and burls to make beautiful handles with. We have had more help from our little worker buddies too. Along with some Platypus gum burl the termites helped carve for us, we also have olive wood root with circles and holes where wood worms have worked their way through. These woods we have stabilized and cast in coloured resin to be a solid block, then to be styled into the wa- styled "D" handles.

Woods we are using are Olive Root, Platypus Gum, Brown Mallee Root, Maple Burl, Dwarf Banksia Pod and Poplar Burl.

Our Handle Blocks

Our Three Knives

This collection is a collection of three knives - the Nakiri, the Deba and Sujihiki knives. We wanted to create a collection a little more traditional to Japanese cuisine yet cross over to cover tasks in western kitchens. All three are made with the very best Japanese knife steel- 67 layer Damascus VG-10 Stainless steel. They are Japanese half tang style. The handles (along with the beautiful Damascus cloud effect) are what gives these knives their beauty and sets them apart from any other knife in the world. We use an eclectic range of woods, some from our local region and some from others. We then cast and stabilise these woods with different colours to bring them together to make the most beautiful, colourful and "energetic" handles to complete these knifes into true works of art. In fact, we aren't sure if these should be in an art gallery or the kitchen at times!

These three knives all complement each other in many ways-

For example- Use your Deba to cut down your protein. The thick heavy blade is great for cutting through the fish's rib cage or the chicken bones. Then you use your Nakiri to prep the veg to go with the meal. Then when your protein is cooked (or uncooked if you dining on sashimi) you can carve/ slice it into perfect portion size with the Sujihiki. Job done! This collection can work so well together for endless delights, only your imagination can hold you back!

3 Knife Collection

The Nakiri

The Nakiri is the most used knife in Japan and it may be the same if we had them in the West. “Na” means “Vegetable” and “Kiri” means “to cut”. The first thing you notice with this knife is its rectangular shape. It is a light nimble knife that has only a slight radius on the cutting edge for "roll" chopping, but its big strength is "cross" chopping. This is where the whole knife meets the board in a single strike, chopping all in its path down the length of the cutting edge. The height of the blade, which remains slim and sharp, makes it easy to chop while the short length make it very easy to control. The Nakiri will out class a chefs knife if you are cutting fruit or veg as it’s lightweight and easy to control. The blade moves quickly and turns fruit into salad in moments.

The Deba

The Deba is one of the older blades you find in Japan (but still quite rare in the west). With a heavy, strong blade heel to get through a fish head or chop through anything solid. It also has a razor sharp edge to the point to do more delicate cuts and get through the rib cage. The single bevelled edge blade is also used to run the con-curve back of the blade over the rib cage of fish to cut fillets away with the greatest of ease. This knife will accelerate the dissection of any poultry or fish, teamed with a longer blade for the final slash is also what helps us create sashimi.

If you like cutting fish - from lip to tail - this is the blade for you (whilst this is the known focus it also does most other things and can be used as a utility knife).

The Sujihiki

Last but maybe the best is the Sujihiki knife. Working with the Sujihiki is like playing the violin. Drawing the full length bow across the strings rather than slashing back and forth leads to a much cleaner cut. The kitchen becomes a construction of an orchestra and the finished look and feel of your cuts go to the next level. The Sujihiki knife is a long knife designed for long drawing cuts. You should never saw your meat, you lose all the juice and goodness in doing so. This razor sharp long edge will do it in one fowl stroke. We give our Sujihiki a Tanto Tip mainly because it looks awesome, who doesn't want to carve a roast with what looks like a Katana sword! However, the Tanto point is especially helpful when cutting sinew away from the bone.

In summing up

So that is the knife set we are looking to craft - The Nakiri, the Deba and the Sujihiki.

Last Point

Last kickstarter campaign was much more popular than we predicted. This meant it took a little longer to deliver than planned. We have improved, however, if you want it soon, order soon. We will make the knives in the order they are ordered so first in, best dressed.
