Kliːvlənd Pickle Works is just a guy with a passion for the city of Cleveland & his pickles; An Unmiserable sour Cleveland original.
After years in the Cleveland underground these Cleveland cukes are finally trying to break into the mainstream. Making them has always been the easy part. The hard part for me is getting them to a price point where my product can remain handcrafted artisan originals without skimping on quality. Glass & Bottle companies have relatively high prices on minimum orders regulating craft canning to whatever brand can be purchased in local stores. This has proven to be expensive and with only the raised glass designs available on store bottles it makes labeling impossible.
This project is going to help out bringing down that price point by allowing funding for most of the behind the scenes glass, bottle and labeling. It means better quality ingredients, larger sizes, and concentrating on the product rather than worrying where I am going to find the jars this time around.
The beauty in this project? You as supporters will be able to enjoy this painstaking labor of love. You will fund the vision I have to bring these to a more mainstream level. I will market them along with other artists at local handmade shows. This is art on a different level. It's the art of food. Make no bones about it, these pickles are a showcase of their very own.
The Pickles come from an age old Polish traditional recipe. These are not the dills you will find on a deli plate along side of your sandwich. You will not find this type of flavor in the grocery store. The unique flavor comes from the ratio of ingredients and small batch processing method. I use simple ingredients: vinegar, water, sugar, garlic, and spices. The vinegar ratio gives them a super sour kick, the sugar gives a hint of sweetness and mellows the sour and the final bite comes with the peppers and garlic. The cucumbers are sliced to desired thickness depending on the crop. Firm ones tend to be a thinner slice and a softer out of season harvest will yield a more robust thick cut.
I try whenever possible to use 100% local grown ingredients so the majority of the produce is fresh from Ohio farms or from the famous Cleveland West Side Market. I only want the best for these pickles because I take pride in this original recipe. I have been known to shut everything down for weeks at a time I am so picky about the freshness of my pickles.
