Chicago Johnny's Signature Blend Giardiniera is a hit! We have had some headaches keeping up with demand (but those are the headaches that we all wish to have!) and we are seeking to go legit! We are asking for you to get us moving in the legal direction. Most of the funds are going to file legal paperwork, a couple of sanitation and food safety courses, and commercial kitchen fees for Chicago Johnny's to become legal. As you can see from the image above, we are picking up broken pallets, discarded lumber, and trash on the side of the road to make our stands used in stores, fairs, markets, etc. Reusing this lumber is just one way we stay eco-friendly in an industry full of waste.
We use, and plan to continue using, Ball brand Mason Jars. These jars are made of easily recyclable glass, but more importantly, you can reuse these jars yourselves! I always hated picking up salsa in sturdy glass jars and having to discard them because I can't find lids for the containers to reuse them! Also, if you find us at any fair, or I deliver your orders personally, we will take back the clean, used jar and band and give you $.50 off of your order!
We are in talks with a local, far northern suburban organic garden about growing for us next summer. So far so good, and we don't foresee any reasons that we won't be using them to make organic batches of Chicago Johnny's next summer and henceforth!
We have been, and will continue to do so, buying produce locally grown, from the U.S., or from local farms (we were lucky this season to pick up our cauliflower from a local and organic garden) when we can! We are still seeking options for weather related issues, such as the harsh Chicago winters, but will continue looking!
We have a compost on site where we make our giardiniera!
We don't have chemical processing, automated mechanical processing, nor preservatives/food dyes/chemicals added to our giardiniera. These are some of the reasons we started Chicago Johnny's, to get away from chemicals!
We keep our work close, to family and friends. We put our heart and souls into this product to ensure you have the best experience when indulging in our product!
What is the flavor profile of Chicago Johnny's?
Chicago Johnny's is an artisan giardiniera. Our spice mix, fresher and more local produce, and hand processing make giardiniera an art form. I spent two years experimenting and refining a recipe that has a spicy kick, smoky flavor, and earthy tones that compliments the heavy flavors of midwestern food. In addition to bold, smoky, and earthy tones, the oils itself can be used for making grilled cheese, quesadillas, flavoring martinis. etc. All aspects of Chicago Johnny's can be utilized!
Why do we need funds?
Right now I work out of family members homes in a long, two-day process to make a batch of giardiniera. By going legal, filing the FDA required paperwork, taking state sponsored sanitation classes, etc., I will no longer be able to 'revert' back to the home kitchen. The moment the paperwork is filed I have to work out of a kitchen and rent space to keep the finished product and tools. The funds are going to the filling fees for the business and kitchen and storage rental fees. By going legal, we are able to sell our product in stores, markets, etc. and can reach a much larger market. We can also attend many of the farmers markets that we have been asked to attend, but without the legal process, haven't been able to. By reaching a larger audience and moving more product we will be able to make our own kitchen and work on future projects and products! Get us to the next step and watch us unlock this hidden potential!

crap. The jar arrived, and I had somehow missed the USPS notice so it was in
the apartment office for two days.
I wish I had remembered to check two days ago, because HOLY CRAP. As soon as I got in the door, I whipped out a spoon and managed to pry that well sealed jar open. Oil splashed everywhere and when the smell hit me, I laughed. Because it smelled divine. And I didn't care about the mess.
This stuff is AMAZING. I'd never had giardiniera before and figured, "well, hell, I live once and that stuff looks delicious. Why not support someone on Kickstarter?"
One of the best kickstarter decisions I'll ever make. My only problem is I'm sure I didn't order enough. If it weren't made with oil, I'd probably heat it up as a stew and eat a bowl. It's that damn good. You've done something great here and I sincerely hope you're proud of yourself. Because you should be.

Well let me just say that Chicago Johnnys is 'EXCELLENT'! I love it, its smokey,sultry flavor really sets it apart from all others. Its great with steak,sausage,and sandwiches! I purchased the small bottle to try it and it was gone in a week!
I just wanted to take a moment and thank you for sending the packages out. I honestly didn’t have extremely high hopes considering the shipping (most of these things with Kickstarter that involve perishables wind up at my door broken or spoiled), but I must tell you that this stuff is incredible. I don’t know how you’re able to impart so many great flavors and
I will be sharing it with everyone that comes over, and bringing a jar to our business for use on sandwiches, etc. If you are open to shipping more, I can almost guarantee that my business partners, family and friends would all be open to ordering.
