What is Chicago Johnny's?

Chicago Johnny's started as a small artisan giardiniera company when I had extra vegetables in my front yard garden. About this time I had also started a natural diet, and I wasn't able to find a giardiniera that didn't have preservatives, added chemicals, or artificial dyes. I took the opportunity to utilize the excess garden vegetables and my love for hot peppers on my beef sandwich and started to experiment with recipes. After experimenting with 30+ recipes, I reverted back to recipe #2, the Chicago Johnny's Signature Blend Giardiniera. The flavor profile of this giardiniera is bold, spicy, smoky, and earthy; quite frankly, the response to this giardiniera has been incredible.

What is giardiniera?

For those of you unfamiliar with the Chicago condiment, to understand giardiniera, you must first understand Chicago style food. In Chicago we have a tradition of hearty meals, rich in succulent and greasy meats, vegetables that have been canned and cured, and meals that we can typically eat with friends and family. Pasta dishes are abundant in Chicago, overloaded hot dogs, gigantic Italian beef sandwiches, and of course, the infamous deep dish pizza. All of these typical Chicago foods are often topped with giardiniera. Giardiniera gives these deep, hearty, rich foods a spice and crunch, and refreshing crispness we lust after, thus completing the dish with our typical culinary exaggerations that we are used to in the Chicagoland area.

It is generally agreed that modern giardiniera was created in Chicago early on in the 20th century. Typical giardiniera consists of pickled hot peppers, celery, and a mix of cauliflower/carrots/olives in oil. In Italy (and as we remember our mothers, grandmothers, and great-grandmothers giardiniera) giardiniera can consist of any vegetable mix coming out of the garden and typically packed in oil and refrigerated (without the pickling process). This giardiniera does not last very long, thus, in typical Chicago tradition, we pickled and packed the mix in oil to last through the rough winters.

Who am I?

Like many Irish/Dago/Catholics, I grew up visiting the Church on Sunday mornings and immediately visiting Nana and Papa for a light brunch and a heavy early afternoon pasta dinner. It was always the food that brought us together as a family, but it was the company that kept us together. Other Chicagoland Irish and Italians (and Pol's, Germans, Mexicans, and other large family dwellers) know that it isn't easy to fit 15, 20, 25+ people into one house for dinner on Sundays, but we did.

Drowning out the noise of the multiple kids running and screaming for hours on end was the time I got to spend in the kitchen with my Nana. She always took time to answer questions that I had, no matter how ridiculous, inane, or complex; you know the all powering, "why?"

I was young when my Nana passed, but I cherish every moment I spent with her. My love for the culinary may be how I keep her alive.

I later went on to college at a Liberal Arts institution where I was able to explore education in a small environment. After 3 short years I graduated with a Bachelor of the Arts in the worst time to graduate college. This down turned economy kept me working an array of retail and odd jobs for whatever cash I could get. So, instead of waiting for the world to approach me with an opportunity, I sought it out myself. With the help of family we started making giardiniera in our home kitchens over good food and conversation.

I enhanced my giardiniera recipe, started very small (3-4 gallon batches), got a little bigger (5-6 gallon batches), and before I knew it I was making a batch every 8-10 days (18-20 gallon batches). Demand spun out of control, feedback was astounding, and requests have been coming in non-stop for more! I've even sold out at some local tastings in the markets!

So what is it that you and I can get together on and make happen? We need our first scale batch made! As of now I am making batches in my humble kitchen in 3 day batches. Needless to say, after putting in 3 days to making a batch of Chicago Johnny's Artisan Giardiniera, delivery, and labeling, there isn't any time to be had to market, promote, or expand!!! So I would like to collaborate with all of the lovely people here on kickstarter so that I can utilize a local manufacturer in the heart of Chicago so that I can continue expanding the Chicago Johnny market!

As I was saying, by the time I finished a batch it was already sold! I found a local manufacturer that will hand pack the giardiniera, with mostly local ingredients (they get their produce from Michigan with the exception of hot peppers unless they are in season), and with natural ingredients. Utilizing this process I will also be able to enhance the product with olive oil and make a soy-free product!

What is the need for this project?

Many of the fans of Chicago Johnny's Artisan Giardiniera have been requesting that I sell the product in a market close to their home. Though these markets and shops LOVE the product, LOVE me, and WANT to sell Chicago Johnny's Artisan Giardiniera, they CAN'T! Because giardiniera is naturally pickled and an acidified food, it has to be made by someone with the credentials and ability to do so (thank your local FDA office if you get a chance). I have run into many roadblocks at many markets because of this and the only way to overcome them is going through this certified manufacturer.

I was able to find someone with the required training and certifications and still works the old fashioned way, BY HAND! These guys and gals have been hand packing products for 20+ years and the company has been a Chicago staple for over 90 years. This is the only place I have found that still works by hand, and that is important to me. I had a chance to see the operation and can visit as often as I need to when Chicago Johnny's Artisan Giardiniera is being hand packed. The personable employees made me feel like I was walking right into my Nana's home and were very welcoming.

Needless to say, this is the ONLY way that I can get Chicago Johnny's Artisan Products into stores. Not only will I be able to sell in your local markets and shops, but the product line can be expanded almost immediately! Our latest venture is experimenting with all natural coffee creamers, muffalettas, spreads, and bean dips!

Risks and challenges

In past projects I completely underestimated the strength of internet media. I will send out samples to internet web loggers 1 week before I launch this project. I will launch a social media awareness plan at the start of the project launch that will accompany a $100 google adwords campaign and visit Chicago markets to promote the project by giving tastings at markets in the area.

My successful project, and somewhat successful project, were both accompanied by a google adwords campaign and store visits in the Chicago area. These two activities should help raise awareness of my project.

A new campaign I will try is my blogspot account that I just launched. I will post winter friendly recipes that are searched throughout the holiday season that will link directly to this kickstarter project. With over 100 hits in 3 days for my first web log post should prove to be beneficial in the long run of this campaign.

In past campaigns, pledging to the project has been slow, but steady. I have extended the timeline of this campaign so that the websites, blogs, and other SEO tools will have time to 'log' and 'rank' this project and links to it.
