About

In this book, we provide you with a resource to connect you to the food you eat and the Vermont food you should be eating. It's intended to get you started and provide as much information in one place as possible, with references to other, deeper, books. Rather than being the whole wheel, we want this book to be the hub, connecting all of the different parts necessary to bring you closer to your (and Vermont’s) food and food producers. We want this to be the first book you pick up when you think of Vermont food to find your answer, then (if you need to) continue on to the other resources you found.

Wait, you want me to eat nothing but Vermont food?

Let us be clear—we are not expecting you to start eating 100% Vermont food tomorrow! There are some challenges we cover (especially for those with restricted diets) that may be dealbreakers for you. You might not have the money or the time to commit to growing more of your own food. We get it! In the interest of increasing the amount of food that’s both produced and consumed in Vermont, even some small first steps are valuable. With that in mind, the first chapter (The On Ramp) will get you to consider your location, your menu, and your resources to decide how you can get started, regardless of whether or not eating 100% Vermont food is ever your goal.

Why are we doing this?

In the face of climate change and national political uncertainty, we feel it's more important than ever for Vermonters to help develop our local food systems, self-sufficiency, and resilience.

More concretely though, we are in full support of the various local food advocacy groups working towards getting Vermonters to eat 10% local food by 2020. We believe that goal is within reach!

We also want to help:

  • Support local farms
  • Boost our local economies
  • Reduce "food miles" and food waste
  • Make fresher food available to more people
  • Encourage production of plants most suitable to Vermont

What's in the Guide?

This book is organized into five main sections:

  • The On Ramp
  • Recipes
  • Producers
  • Products
  • Starting a Garden Co-op

The goal of The On Ramp is to help you decide what your next actions are so that you can start eating more local food. Recipes is a collection, month-by-month of recipes featuring only ingredients that can be grown in Vermont and that are available in-season or preserved in that month. For example, tomatoes are typically available fresh between July and September. In February, there aren’t any recipes that call for fresh tomatoes—any that require tomatoes will use those that have been canned. The Producers chapter provides a huge list of Vermont farmers and other food producers that sell directly to consumers, broken down by county. Products describes most foods that can be grown reliably in Vermont, when they’re in season, how to preserve them, links to recipes in the Guide that use them, and links to the producers that grow or raise them. In her time outside of work and writing, Cécile works with a garden co-operative with three other people that produces a large portion of their food on her homestead in Worcester, Vermont. Starting a Garden Co-op builds upon her experience and takes you through the steps necessary to organize members of your own neighborhood, community, or family to collaboratively produce food on your own.

Which foods aren't local to Vermont?

Compiling recipes that rely on only Vermont ingredients was challenging in several ways. One of the challenges we found was that many of our favorite recipes called for ingredients that can't be grown easily in Vermont (or aren't available in reasonable quantities). The following list gives a sample of foods that do not appear in any of the recipes in the book, though we do have substitutions for most:

The great news is that Vermont has a wonderful selection of vegetables, meats, and dairy products to include in our recipes, like:

  • Sage frittata
  • Shepherd's pie
  • Cheddar and parsnip soup
  • Rhubarb apple crisp
  • Stuffed grape leaves

What rewards are we offering?

Testimonials

“I'm excited for Vermonters to get their hands on a copy of The Vermont Locavore's Guide. The more we can do to connect people to local farms and producers, the more of our money stays in the local economy. Not only that, but as Vermonters get to know their farmers and can discuss the practices they use—conventional, GMO-free conventional, or organic—the more certain they can be that they are spending their money on the food they prioritize for their values.” David Zuckerman, Full Moon Farm, Hinesburg & Lieutenant Governor of Vermont

“I am always so happy to get back to Vermont when I travel. The food scene is so so stark and monolithic in much of the United States. In Vermont, the people have decided to prioritize feeding each other high-quality and life-affirming food, produced by artisans working with the soil and the sunshine. With this guide it becomes that much easier to discover these folks and enjoy the products of their passion.” —Buzz Ferver, Perfect Circle Farm, Berlin

“We love the idea of The Vermont Locavore's Guide as a starter’s guide to eating more local food. It’s like buying plant starts. You may buy one or a few of them to grow in your yard. You may not become a farmer or a master gardener. But you will produce something that you will eat and share with family and friends. You’ll know where it came from and what it took to get it from stem to stomach. This book is far more than a resource guide. It’s a roadmap that will point you to who grows it and where to find it in Vermont, without the baggage of the commercial food industry. This book is the perfect starting point to rekindle a closer relationship with your food by introducing you to farm neighbors like us who plant the seeds and grow the piglets and the markets that sell their products. To navigate the universe of made-in-Vermont food options, start here.” —Charlie & Cassie Morse, Farmor Farm, Northfield

“When individuals and families think about where they buy their food, they can choose to not only protect the character of our state but also enhance the economic vitality and quality of life in our communities. At the Vermont Land Trust, we know that there are skilled farmers looking to farm in Vermont. The Vermont Locavore’s Guide is a great resource for those searching for ways and places to connect with farm neighbors and support their local businesses. This book will also guide the reader to taste the vegetables, fruit, meat, and cheese that are fresh, delicious and Vermont-raised.” —Elise Annes, Vice President for Community Relations at The Vermont Land Trust

“Food is everything. It's the core of our health and well-being, our most basic connection to the planet, and one of the best tools for building both intimacy and community. Grow food well—ecologically, ethically, locally (and, of course, deliciously)—and we can heal both ourselves and the world around us. Tackling climate change and ensuring food justice are immense collective tasks, but fortunately, The Vermont Locavore’s Guide is a fantastic tool for supporting each and every once of us as we participate in building Vermont a mighty local food economy.” —Kathryn Blume, founder of Vermontivate!

“At Rural Vermont, we believe that this amazing state is at its best when people have the opportunity to live in deep connection to one another and to the land that nourishes us all. The Vermont Locavore’s Guide is an essential resource for anyone looking to deepen their connections to place and food. It should be read like a good meal is eaten: Slowly and with gratitude for all it affords.” —Ben Hewitt, Rural Vermont & author of The Town That Food Saved: How One Community Found Vitality in Local Food

Who are We?

Cécile Green started growing food when she was 17 on an unforgiving piece of ground behind the family house. Her passion for plants took her to a sustainable farming internship in Arkansas, an organic wheat farm in Kansas, and through a B.S. in Community Supported Agricultural Systems before she landed a job at LePage Farm in Central Vermont. After a season of milking recalcitrant goats and pulling weeds, she launched Green Mountain Mesclun at the Intervale Center in Burlington. Inspired by her original dream of communities growing their own food collectively, she took the next few years to explore several different intentional communities before settling down in Ann Arbor, Michigan to run an ecological landscaping and building business where she eagerly encouraged homeowners to grow their own food. Ten years later, Cécile returned to her roots in Vermont and started a garden co-op, where the members grow most of their yearly produce needs from the rocky soil of Vermont’s mountains. Throughout her journey through multiple different communities and organizations, Cécile became aware of the central need for a better way to lead and manage collective entities and so researched and developed Collab, a simple set of communication tools that enables shared leadership and effective self-managing teams, which she now teaches to organizations of all sizes and shapes through Round Sky Solutions. The Vermont Locavore’s Guide is the product of a lifetime of food growing passion and an intense desire for humans to figure out how to get along, so that the coming transitions can be navigated generatively.

Though descended from dairy farmers, Jeremy Hansen makes his living as an associate professor of computer science at Norwich University, where he teaches and researches security, privacy, and computational social choice. He lives with his wife and two kids in Berlin, Vermont. He also stays busy in his "free time" by cooking, reading, watching movies, and serving his community on the Berlin Selectboard, the Berlin Volunteer Fire Department Board, and the Berlin Economic Development Committee. Recognizing the importance of local hands-in-the-dirt solutions in our increasingly complicated technological world, Jeremy spends a good deal of time thinking about what our interrelated social, political, and agricultural systems will look like over the next twenty years. As a longtime educator, he sees the Guide as a tool that can help individual Vermonters easily transition to a more localized and lower-carbon diet.

The Vermont Locavore's Guide may also be found on Facebook and Twitter.

Risks and challenges

Barring unexpected life changes, both of us have enough time to complete the book by the end of the year. A rough approximation of how far along we are, by chapter:

The On Ramp: 60%
Recipes: 60%
Producers: 15%
Products: 80%
Starting a Garden Co-Op: 50%

The typesetting and layout are complete, but some photos still need to be taken.
