About this project
Our goal is simple. We want to expand the Firebird brand, to create 3 more Organic, Rainforest Alliance Chocolate bars and 1 more single-origin, direct-trade coffee as well as our awesome European-Style Drinking Chocolate. Following is a list of where we want to go, in order of importance. We need your help!

- Dark Chocolate - 70% Cocoa with no added flavors.
- White Chocolate with Roasted Cocoa Nibs Bar
- Milk, Hazelnut, Toffee Crunch Chocolate Bar
- Dark Chili Lime Chocolate Bar

There is little Organic, Rainforest Alliance chocolate on the market, especially on the West Coast. It is important for our Earth, but more important for her people that we get this product on the shelves and to the people that want it, even deserve it!
Current Chocolate Bars
All of our chocolate is certified USDA Organic and also carries the VERY important, Rainforest Alliance certification. We now have our initial bar, Espresso Dark (70% cocoa), our Huckleberry Dark (60% cocoa with real and whole huckleberries), and our Milk Chocolate (41% cocoa) bars. All three have become very popular in their short time, with our Huckleberry Dark having a narrow lead on most popular. To find out about each chocolate bar, please click here.
Sure, there are a few organic chocolate bars on the shelves (natural markets and co-ops mostly), but do they taste good? Or chocolate bars are "the fancy chocolate you want to eat," essentially, "great chocolate for every day." Not only do we need more options, but we need higher quality and better taste!
Current Baking Chocolate
Our baking pieces, again both Organic and Rainforest Alliance, consist of Semi Bittersweet Baking pieces (70% cocoa) and White Baking Pieces (30% cocoa). These 8 ounce packages have become hugely popular in the last 2 months since we introduced them. Great for baking, and hard not to snack on them! Next time you are at the supermarket, look at the baking chocolate options. Sure, the big boys are there, but do you see ANY organic pieces? Nope, not unless you shop at a co-op, and even then, there aren't a lot of options. If you think that high-quality baking chocolate is worth-every-penny, than PLEASE support us today!
Current Single-Origin, Direct-Trade Coffee
The coffee that we infuse our Espresso Dark chocolate bar has become a whole bean, medium roast of single-origin, direct-trade coffee from the Yirgacheffe region of Ethiopia. We have just recently added our 2nd single-origin, direct-trade coffee, that comes from a tiny village in Batzchocola, Guatemala. We believe that single-origin, direct-trade coffee is MORE important than a Fair Trade certification, as we personally can vouch that the farmers get BETTER-THAN-FAIR-TRADE prices. If you even have an inkling of concern that the "Fair Trade" stamp doesn't do enough, than we NEED YOU to support us. Help us put more money into the hands of the farmers that need it the most, those that harvest the beans!
In addition we put 10% of our GROSS profits back into health and wellness issues in these countries. In Ethiopia, we are helping to fund a water well in Gondor, Ethiopia through International Assistance Program, a non profit with projects primarily in Africa (Ghana - a Children's Home, and a Micro Finance bank, focused primarily on women, in Addis Abbaba, Ethiopia). In Guatemala, our 10% contribution is going to Agros International, a non profit based out of the Seattle area that provides micro finance and Land Grants to help impoverished villages throughout Central America.
