The Innovo Pizza Grill Stand is the incredible, new way to make great brick-oven style pizza right at home on your gas grill. Our patented design takes all the guesswork out of making great pizza; it’s easy, convenient, and gets you a crispy crust that’s been cooked perfectly throughout.
Why did we design the Innovo Pizza Grill Stand?
We're passionate about cooking on our outdoor gas grill all year round, even during the Northeast’s coldest winters. While we're not trained chefs—or even Italian—we both really love pizza. We tried making pizza with a pizza stone directly on our grill, but it was a miserable failure. The pizza would burn on the bottom or never quite get crisp and bubbly on the top. We weren't interested in buying another bulky appliance that took up a lot of space and ended up buried somewhere in our basement! We headed to our workshop and started tinkering with our first prototypes. They were heavy and clumsy, but we knew we were moving in the right direction. We consulted with engineers. They talked about ‘thermal mass and radiant heat energy." All the while our backyard pizza was getting better and better. We had friends over for pizza parties and when they started asking to buy one of our “stands”, we knew it was time to get serious. We hired a commercial steel fabricator to build prototypes. Two years later, with your help and with a patent pending, the Innovo Pizza Grill Stand is ready for production.
How does the Innovo Pizza Grill Stand work?
In a brick oven, radiant heat can come from two sources; directly from the fire, and from stored heat in the oven walls. In your gas grill you get heat almost exclusively from the gas burners. In a grill, there is no effective way to store this heat and as a result when you open and close the grill during cooking you lose much of the radiant heat that is inside. If you put a pizza stone directly on your grill grates and fire up your grill, chances are the bottom of your pizza will quickly burn to a crisp while the top remains pale and undercooked.
The stainless steel plates on the Innovo Pizza Grill Stand absorb large amounts of radiant heat much in the same way as the brick in a brick oven. In many gas grills the Innovo Grill Stand plates can reach temperatures in excess of 800 degrees Fahrenheit. This heat radiates throughout the grill and mimics the effect of a brick oven.
Sitting on top of the Innovo Grill Stand riser posts, two inches above the steel plates, our custom sized pizza stone rests in an elevated position in the middle of your grill. This elevated position, above the steel plates, positions your pizza to absorb radiant energy from the plates without exposing your pizza to the excessive heat that the plates absorb from your grill's burners directly below. In most cases, there will be a temperature differential of about 100 degrees between the Innovo Grill Stand plates and the pizza stone.
The heat from the Innovo plates surrounds the pizza stone with intense radiant energy without excessively raising the pizza stone temperature. Your pizza gets cooked perfectly and consistently throughout.
What Comes in the Box? When you open your Innovo Pizza Grill Stand kit you will see 3 main components along with a simple instruction manual:
1) The Innovo Pizza Grill Stand- made of 3 mm stainless steel and weighing in at almost 9 pounds, this hefty commercial quality cooking stand comes in 2 parts for ease of handling and storage.
2) Our pizza stone- Fabricated out of 1/2 inch cordite ceramic composite, weighing over 8 pounds, and measuring 15 inches square, our stone fits perfectly on the Innovo's riser posts.
3) Our infrared thermometer- Unlike most big box infrared thermometers that only record up to 500 degrees, Innovo's will read temperatures to over 900 degrees Fahrenheit making it ideal for use with your Innovo Pizza Grill Stand kit.

Will the Innovo Pizza Grill Stand work on my gas grill? The Innovo Grill Stand is 16.5 inches (42cm) deep and 16.5 inches (42 cm) wide so your gas grill needs to have a grilling platform that's at least 17 inches deep. We have tested the Innovo Grill Stand on numerous "full size grills" (Weber Genesis, GE Monogram, etc.) and it fits them all. Your grill needs to be able to reach 600 degrees Fahrenheit in its present condition. (Your temperature gauge will work for this purpose.) As a general rule of thumb, your grill should have at least 2 burners.
How much gas will my grill use when baking with the Innovo Pizza Grill Stand? This is a tough question to answer accurately. It depends on your grill, the outside (ambient) temperature, and how many pizzas you're making. Your grill manufacturer probably has an estimate of your grill's gas consumption rate in your manual. We suggest you start with a full tank of propane the first time you make pizza and watch how it goes. The last thing you want is to run out of gas when you've got a crowd watching you make dinner!
Can I bake bread with it? Absolutely! You can bake your own artisanal breads right in your backyard grill. Ours came out great, and had a crusty, crunchy crust with an air filled interior. We have a simple bread recipe that's easy to follow and the results are delicious.
Will the Innovo Grill Stand rust? The Innovo Grill Stand is made of high quality 201 food grade industrial stainless steel. When exposed to high temperatures in a gas grill the Innovo will quickly turn bronze in color. This is normal. Stainless steel does not readily corrode, rust or stain with water as ordinary steel does. However, it is not fully stain-proof or rust-proof in low-oxygen, high-salinity, or poor air-circulation environments. If you store the Innovo inside your grill it will eventually stain and develop rust.
How long will it take for my grill to reach proper temperatures? In warmer months most grills take about 15-20 minutes to reach a cooking temperature. When we make pizzas in the Adirondacks during the winter, (yes, we make pizza year round) it takes a bit longer. If you're using your Innovo Grill Stand during the winter, it's a good idea to store it indoors along with your pizza stone. This will reduce the time it takes to heat up during cold weather.
How long does it take to make a pizza? Generally speaking, it takes between 3-5 minutes to make most pizzas with your Innovo Grill Stand! At 625-650 degrees Fahrenheit (read from our infrared thermometer on our stone) your pie will cook within this time frame but there are variables. Your grill has its own "sweet spot" in terms of time & temperature. You'll quickly figure out these variables and be making great pizza in no time.

Timeline: We’ve worked very hard to bring The Innovo Pizza grill Stand to where it is today. We’re already in the final stages of development. We’ve tested or final prototypes and we make beautiful pizza, but now we need your help to take the final step. The money raised on Kickstarter will go directly towards the final tooling and first production run. Risks and challenges
In the early developmental stages of this project, we fabricated prototypes without regard to weight. Our first Innovo Pizza Grill Stand weighed in at 30 pounds for just the steel! We were having fun experimenting and making pizza with friends and we never considered the cost of shipping! When the Innovo Pizza Grill Stand began gaining traction and we realized we had a promising project the cost of shipping a complete kit that weighed in at a whopping 42 pounds (steel and pizza stone) became a factor. We began experimenting with aluminum and thinner versions of steel plate. In creating radiant heat energy size does matter. Eventually we were able to reduce the weight of Innovo's stainless steel plates to around 9 pounds without compromising baking efficiency. Our Kits' total weight is still a hefty 21 pounds and shipping is expensive, especially internationally. Having products manufactured overseas always presents issues relating to potential unforeseen delays.
