sorry i made a typo, i meant to say kana instead of kanji in the following sentence.
Using "kana" entirely does not make the name sound very interesting, having a kanji is better.

Japanese people love using Kanji in names and it sounds nice if an old kanji is used,m that is why we first had 龍 old chinese like Kirin, however 竜 is more fitting for western, lizard-like dragons.
Of course some japanese games write out the dragon as ドラゴン , Dragon Quest for example, but that is often meant as pronunciation help for those who have trouble reading english or if Dragon fits better than Ryuu for their purpose (Doragon Boru).
In our case however we wanted to reflect the meaning of the name and not merely the sound, dragon fin soup name is inspired by the Chinese Shark Fin Soup and so we chose to write it this way and the の as i said is correct, japanese write it both ways.

if its 3 words its ok as well, as long as we keep it under 20 characters but best only use letters, no -

The title was translated by a good friend who is japanese and an avid gamer.
The latest version we use is 竜ヒレのスープ, 竜 is used not because it is more common in modern japanese but simply because is more commonly used for western dragon and 龍 is used more for Chinese/asian dragons.
Using Kanji entirely does not make the name sound very interesting, having a kanji is better.
Japanese people like using Kanji in names. also Doragon-Hire is a bit long, Ryuu-Hire is just better.
As a non native speaker it may sound strange to use having a の there but it is commonly used the way it is bot with and without の. There are 2 reasons we are using の. 1) without the の the name does sound slightly more like a restaurant dish and you must know that japanese people like a certain rhythm in names, they prefer the numbers 3,5,7 so "Ryuu-Hire no Suup" flows and sounds a bit better than "Ryuu-Hire Suup"

So this is sliiiightly offtopic, but I'm curious how you chose the Japanese translation of the title? I don't remember if you've always had it, I only noticed it with this latest update. XD But I keep thinking it reads kind of awkward in Japanese. Mind you, I'm not fluent, but I do read fantasy novels/play fantasy games in Japanese on a semi-regular basis, and usually have a good sense of what is/isn't typically used. I would honestly suggest that you drop the "no" from it, as while including it is technically correct, it's technically correct in the same sense that "soup of dragon fin" is correct in English. 龍鰭スープ or some combination of kanji/kana thereof (it's possibly also worth noting that 竜 is probably more commonly used than 龍 in modern Japanese) would be just as accurate and flows more naturally in Japanese. For comparison, see the title of the Japanese wikipedia article for chicken soup: http://ja.wikipedia.org/wiki/%E3%83%81%E3%82%AD%E3%83%B3%E3%82%B9%E3%83%BC%E3%83%97

...with all that said, however, unless you're going for a fancy-sounding name, my first choice would be to ditch the kanji entirely and render the title ドラゴンフィンスープ (or with the ・ spacer in there to make it easier to read perhaps) as 1) "dragon" and "soup" are well-recognized English words in Japanese, especially in fantasy games and 2) in Japan using English like that is still oddly trendy and cool for reasons that frankly escape me. So yeah. My two cents as an avid player/reader of WAY too many Japanese series. :|b
