About Gomen-Ramen 「ご麺ください」から愛を込めて
Gomen-Ramen is a new noodle shop with a Japanese bar. The business idea of this ramen noodle shop is derived from our 10-year experience of serving food through Gomen-Kudasai Noodle Shop. Gomen’s business concept was serving delicious and nutritious Japanese food which we could eat every day with joy, and enjoy healthy life.
Gomen-Kudasai was a great place. We served Udon and Soba noodle dishes as well as a variety of rice dishes and appetizers. Rare sake and other alcohol drinks were served and the line-up of different kinds of teas and sweets was another speciality. Because of our policy, no Gomen food contained MSG, and we never served GMO food. Everything was real. We cooked fresh organic vegetables delivered from local farms, Japanese products for authenticity were carefully selected, and organic products were used for main ingredients and seasonings. We created many original recipes including desserts and drinks, and some of them became popular products later in the market.

Kazuma, a metal sculptor and Youko, an experienced graphic designer/executive chef, we never stopped pursuing improvement of our services. As the result of that our work hours at Gomen-Kudasai exceeded too much more than feasible and the running cost became too much more than affordable. We realized that the restaurant became unsustainable no matter how hard we work, and we had to make a decision of closing it. We were very sad and felt guilty for our friends and customers. We wanted to keep on feeding them all… HOWEVER we were considering the possibility of serving RAMEN noodles prior to the closing. One time we arranged one day a week to serve ramen - "Ramen Night" on Tuesday. We did intensive ramen research at that time and experimented different kinds of original ramen broth. Thank you, Joe Cheung and Momo-san for your help. The second time, we were going to open a small shop, "Go-Ramen" in downtown New Paltz. We were very excited and went through all the necessary procedure, but it didn’t happen for some reasons!? Now’s the third time truth!

We found a dream location right on Broadway in midtown Kingston, perfect size space with big windows, surrounded by nice neighbor businesses. UPAC (Ulster Performing Arts Center) is right in the next block. I hope Willie Nelson performs there soon. A huge municipal parking locates across the street. We signed the lease, finished the business plan writing and finalized the floor plan.
We have completed the menus for both ramen bar and drinking bar. Most of the necessary equipment are kept in the storage. Our staff from Gomen-Kudasai are standing by for working together again. WE ARE READY to start the new noodle shop business to serve delicious noodle soups for everyone - challenge our commitment to the community ONE MORE TIME.
When you see the floor plan, you will find many memories from Gomen-Kudasai: furnitures made by Kazuma, a stage for live performances, a place for gathering over good food and good music. We are eager to bring back Gomen’s vibe as "Gomen-Ramen". We worked very hard to come to this point. The last thing we need is support from you, so please help us raising the funds. Risks and challenges
By running another noodle shop in the next town, we have learned a lot about challenges and risks of managing restaurant business in the area. My biggest fear is the national economy and the climate changes. For the depressed economy, we have affordable price range for all customers, and reasonable overhead and lower running cost for us. We have connected with the business advisors and specialists in the industry and many local purveyors, so we receive non-stop and real time advices to get ready for changes. We are not alone to challenge these risks.
We believe in the power of real food and the bond to the community.
