Wow, 30K is pretty impressive, hell at this rate you guys might rake in as much money as the game itself got. In terms of ideas for stretch goals, I would go in a merchandising direction. Nothing too crazy like backpacks or jackets, but small stuff like keychains, bracelets or posters. Just more physical memorabilia, for example I saw a car the other day that had Papyrus and Sans as a sticker on their windshield, I would totally put something like that on my car. If you've got extra money, make extra stuff, that's my take on it.
As far as stretch goals--maybe a bookmark or additional sticker design at most? We know you're already putting the funds towards quality paper, binding, design, and charity. It's already wonderful and, while stretch goals help to attract attention and incentivize giving more, we're all here for Undertale and charity. That's a great combo that attracts those who want to give already.
