Flour Water Salt was established in Macclesfield in 2009. We spent many years baking in an eclectic mix of spaces, including a cellar, a scout hut, a barn and a warehouse. Over the years we've attracted a truly talented set of individuals who all represent the Flour Water Salt brand. We were baking the best bread and pastry in the North of England, but we really weren't getting anywhere. We were paying bills and treading water. We needed to find a way to allow Flour Water Salt to flourish. A couple of years ago we were shown the old "Silvercoin" amusement arcade which had been empty for some years and needed a new lease of life. We saw 9 Market Place as our opportunity to boost our exposure in Macclesfield and add something fresh onto a tired high street. On 24th February 2018 we opened the doors to 9 Market Place, five minutes later we were full and we've been pretty much full every day since.
WHY IT MATTERS
We are an independent, family owned business who currently employ sixteen people. We produce award winning bread and pastry that are unrivalled in the North. Daily we supply some of the best food outlets around, including Altrincham Market and Mackie Mayor in Manchester's Northern Quarter. At a time when we've seen major retailers failing on the High Street, Flour Water Salt seems to have occupied a different space: it's a place where people can meet and work and it's here where communities have formed; smiles and nods are commonplace; it's a place to sit in comfort and enjoy the theatre of the kitchen and the bustle of the counter.
It's now a year since we opened. We recognise some of the shortcomings of our building. We know there isn't enough room some days to sit down. We know it can seem chaotic serving people at the counter whilst others are trying to enjoy their lunch.
At the rear of 9 Market Place are two substantial rooms, which lead onto an enclosed garden. The garden is for another time, but the two rooms would provide approximately 30 more seats and crucially, a much needed extension to the kitchen. The additional seats should ease some of the pressure in the front of the building and the kitchen extension will allow us to extend our current menu and give us the flexibility to open at different times of the day.
Our first year at Market Place has been financially tough. We have spent a huge amount of money keeping our fledgling business afloat. The expansion into the rear rooms and the additional business we hope this will generate should help to ensure Flour Water Salt's future is sustainable.
Plans are in place to start this ambitious expansion. Structural work has been agreed with the Landlord. Quotations are in place for flooring, kitchens, seating and decorating.
The cost of this project is eye watering. Any commercial cooking equipment is expensive. We have, however, privately raised two thirds of the money. We need your help to get us over the finish line and help Flour Water Salt to continue to flourish.
We are not expecting something for nothing. Every pledge will be rewarded.

Risks and challenges
Fitting out Market Place last year was hugely expensive. We've been trading for just 12 months, which means our own cash is limited. That said, from last year's experience, we have a good idea of the costs involved.
