I have wanted to run my own business for the last 30 years - but never quite got around to doing it. When my children were young, I was a stay at home mum and I knitted and sewed for boutiques which gave me great pocket money!
As they got older I started baking for restaurants - I make the best cheesecake and carrot cake!
I found my niche in BISCOTTI - the real Italian ones , correctly called 'cantucci' which have no butter oils or fats as they are made for dipping into coffee or wine.
I started by making them for friends. The fact that they are really meant for dunking was a hit - try them with elderberry wine - and I decided to branch out by selling on line.
I have started a website, http://felicebiscotti.com which might need a professional touch as I made it myself - not to shabby even though I say so myself!
I may try some farmers markets this winter
I buy locally as much as possible and the lemons and oranges i use are from my garden.
I use no preservatives or artifical flavoring.
Now, having said what i make, how about letting you know how i do it!
I still work full time, but from home which means i can go straight to baking after work. I chose the 6am shift to have all the afternoon to bake.
I have semi professional equipment and a licensed kitchen.
I buy most of my supplies locally, there is a flour mill not too far from where I live and I grow the citrus (lemons, limes and oranges) in my garden. I get california almonds and Belgian chocolate from a European acquaintance.
If I raise the amount I need, it will help with marketing, branding and nutritional analysis, and bar coding - thus allowing me to sell to major retailers.

Risks and challenges
someone once told me that when starting a business, you have to be prepared for failure - and for success...if you fail, you need to have a stash put away to pay your bills...and if you succeed you have to have a contingency plan to fulfill any mega orders.
If i succeed i will definitely need to hire more help!!
I am lucky in that i have a very supportive daughter who also is a great cook and who, I know, will be able to lend a hand.
