All the sugar is non-refined, sun-dried, and highly mineralized. The reason that is good: Sugar cane is a type of grass. Grass is really good at absorbing minerals from the soil. A normal sugar (even organic), is grown as a commodity, in high density plantations. You've probably seen this in Maui. The difference in our sugar is that it grows "free range", in it's natural eco-density, at the base of a volcano in Ecuador. The soils is replete with minerals. These minerals that are absorbed in the sugar cane that we use, help the body digest sugars with very little glycemic reaction. The sun drying process is naturally gentle on the enzymes needed to activate the minerals. We have been sharing these chocolate bars with diabetics for the last 4 years. The Dirty bar has 4g of sugar. The Karma and the Gaba Baba have 5g of sugar.
