It all started in our backyard, raising funds to help pay Mai's medical bills that came with her hearing loss. Soon after, we began to contribute egg rolls to fundraising events in our community. As our community fell in love with our egg rolls, and word of our great food started to spread around town, the Eggroll Queen was born.
During the summer of 2016, we purchased our first "new" space (a food trailer) to sell egg rolls & fried rice around the city, Wednesday to Sunday. Tragically, in January 2018, our trailer burned down during a community fundraising event, but thankfully, with the help from the community, we were able to buy a food truck to get Eggroll Queen back up and running again.
During food truck season (April 1 - Nov 15) at lunchtime, our food truck parks at Landmark Plaza on Wednesdays and Fridays, and at the state capitol on Thursdays. In addition, we go to four different farmer markets (Bloomington, Cottage Grove, Golden Valley, and New Brighton) throughout the week. While most of our customers are locals, we have a small following from the surrounding cities and neighboring States. The Eggroll Queen has even reached people as far as Florida.
To give back to the community, which has helped us get to where we are today, we donate a portion of our profit each month to help feed the hungry and donate egg rolls to the community benefits four times a year.
In the fall of 2018, we realized that we needed more space in order to prepare the egg rolls, and that a commercial kitchen or small café is needed, but we did not have the capital to invest in one. When Dr. David and Helene Schultz generously offered to help us expand, we were able to purchase the Underground Music Café on Dec 28, 2018. With this cafe, we are able to expand our community outreach in addition to expending our existing business. Before we took over, the stage in the café supported local artistes and performers, and was built from the help of the community; and will continue to do so under the Eggroll Queen Café. We will be hosting live music, poetry reading, and more every Thursday through Sunday. We have also dedicated one of our walls for local artists to showcase their art. The community will also be able to use our space on Wednesdays from 4-10 pm, for private events, benefits, fundraising, meetings, etc.
The café has been in business for over 20 years and unfortunately it shows. We will need to make considerable upgrades, including a ventless hood system for the deep fryer, before the cafe will be in a state to support the Eggroll Queen Café. To fund these updates, we are hoping that you would either contribute through this Kickstarter campaign or join us at one of our dinner/egg rolls sales events.
We're here today due to the love of our families, friends, associates, and the community. Our story begin with selling egg rolls in our backyard four years ago in order to help pay Mai's medical bills. Today, we have 6 employees working at the cafe, and once the kitchen is completed, we plan to expand our staff to about 10 employees. Over the past 4 years, the community has helped Mai stay sane and create jobs. We have been and always will be thankful beyond words and will continue to pay it forward.
Risks and challenges
Over the years, we have learned to expect the unexpected and do more with less and value a simple functional space over excess. Although, we have budgeted for the planned upgrades to the cafe, county's equipment plan review can increase projects costs and could delay project completion. Therefore we will be hosting fundraising dinner/egg rolls sales at the cafe twice a month to raise additional fund for the unexpected cost.Learn about accountability on Kickstarter
