Update July 9, 2019: Stretch Goal!
We're so excited to have met our initial goal so quickly! Now we have a new goal: the distillery's bar needs some natural light. If we can reach $15,000 funding, we will convert one of our roll-up doors into a glass storefront so the distillery can bathe in natural light all day long!
We're Joe Bidinger and Nikhil Sharoff, and we're your distillers at Echo Spirits Distilling Co. We're opening a new distillery in Columbus, OH, our hometown. This summer, we'll turn on our still to start making a full-flavored cane sugar-based rum. A few months later, we will open our cocktail bar in Grandview and launch our next spirit, genever. Genever is a malt whiskey enhanced with botanicals that is equally qualified to be used like a whiskey or gin in the right cocktail. We also have 25 barrels of our straight rye whiskey aging over in the barrelhouse of Middle West Spirits and getting ready for it's release in the summer of 2020.
How did we get here?
We started out homebrewing beer over a decade ago, when we graduated college during the Great Recession and had beer quality standards larger than our wallets. We started exploring other beverages - wine, sake, mead - and eventually started wondering how distilled spirits were made. Tours of the other local distilleries answered those questions and ignited a fire.
We've been working on Echo Spirits for the better part of five years. It's been a true test of perseverance, hard work, and dedication. To be honest, there have been a handful of times when the devil on our shoulders told us to call it all off. The times when things got really rough. When we spent two years looking for the right location. When people kept telling us we were "dreaming too big" or we were "too young and inexperienced". But when the temptation to throw in the towel came around, we also knew that we had to pursue our dream and that we would always regret not going for it. That we would look at ourselves in the mirror each morning and feel empty. We're too passionate about what we're doing to give up that easily.
We created our distillery to be an echo of a time when we knew the people making our local products. We're hauling ingredients, distilling, taste-testing. You can come in and shake the hand of the person who makes your rum, and he'll personally give you a tour. We’re personable and friendly. While the rest of the world is speeding up, we're returning to a slower pace of life. We're returning to normal.
And here we are. What we need now is a community. Our backer rewards aim to build that community. The rewards we're offering are largely unique to our Kickstarter; we won't be offering these exact designs again, so only our backers will be able to show them off. Almost every reward level comes with tour passes, and many come with tickets to our backers-only party that will happen this fall before our bar opens to the public. We want to meet the people enthusiastic about Echo Spirits - to have you come in and shake our hands and let us show you around, personally.
But the COOLEST reward is the backer wall. At nearly every reward level, we'll etch your name into a brick that will be built into a wall between our distilling and bar areas. Back us and you'll be forever memorialized as someone who helped get us to where we are. And make sure to bring in your friends to show them your cool brick. Especially any friends who didn't back us.

Risks and challenges
The biggest risk to Echo Spirits opening on time is buildout.
Because we're doing just about everything ourselves, we could run into some hiccups with the buildout of our distillery. We're doing our research and consulting with family and friends who know a thing or two, but this is a labor of love all done by hand. Most of what you see in the distillery is designed and created by us.
