Who we are
Hola! My name is Dulce and, along with my husband Joe, I own Dulceria Bakery: a local bakery proudly serving made-from-scratch pastries rooted in the flavors and cultura of Mexico (my home country) - including traditional, vegan and gluten-free options - in Minneapolis, MN.
Baking has been in my heart since I was young and my fondest childhood memories include baking pies at my abuelita’s house in Mexico City. Sitting around the table with my abue, mom and tias rolling dough, preparing fresh fruit fillings and sharing a slice (or two) of pie amidst laughter gave me a sense of belonging that only comes from being in community.
Since then, I have researched and developed modern versions of the bread I grew up with, such as our cupcake-shaped Conchas, gluten-free Mango Toasted Coconut Bars and vegan Apple Cider Churros, striving to provide you with culturally authentic pastries that make you feel en casa.
We Need You
After a very successful year at farmers markets and sold out pop-up events, we outgrew our home kitchen and are ecstatic to move into a brick and mortar retail space where you can enjoy your favorite Mexican-inspired pastries, sustainably-grown coffee and Mexican hot chocolate year round!
We signed a lease for the iconic spot on 42nd E St and Cedar Ave. in South Minneapolis where Colossal Cafe started and our sleeves are rolled up to transform the space into a bright and cozy spot where all are welcome.
Our recipes for our pastries are tried and true. But we are missing a few ingredients. Your contribution will fund the $10,000 we need for :
- Custom Built Pastry Counter ($3,500)
- Electrical work, plumbing, and wall tiling ($3,500)
- Dual Automatic Coffee Machine ($1000)
- Point of Sale Register ($1,000)
- Custom Menu Board & Fixtures ($1,000)
The financing for equipment is in (hurray for a big oven, a mixer, pastry cases, y mas!). Our savings have covered ventilation and previous kitchen buildout costs. Plans & permits have been drafted and submitted. And cleaning, painting and outdoor upkeep are coming up.

Risks and challenges
Every project comes with a certain risk level and we are aware that moving into a permanent space will bring its fair share of both challenges and opportunities.
Hence, we have prepared ourselves to embrace this journey and:
Merged our professional business, customer service, managerial and hands-on experiences
Furthered our culinary training, including a recent 5-week intensive program specialized in traditional Mexican cuisine and pastries through the Escuela de Gastronomia Mexicana in Mexico City
Sought entrepreneurial business training to run Dulceria Bakery more efficiently and effectively
Built and strengthened a diverse network of mentors and advisors to turn to for support and feedback, including community members, fellow bakers & food entrepreneurs in the Twin Cities, etc.
