Why Driftless Provisions?
Here at Driftless Provisions we're passionate about the Driftless Region of SW Wisconsin. We want to share the story of this place in the hopes that, wherever you are, it might root you more strongly to the earth and a more thoughtful, sustainable way of belonging.
What we do is make delicious dry-cured salami that celebrates the relationships we share between the earth, the animals, the farmers, and you.
We’re Ryan and Justin, longtime friends, outdoorsmen, and stewards. We’ve been building Driftless Provisions around the beauty and connection of the Driftless Area and the idea that we think the world would be a better place if more people could know the story that’s being lived here. And the better we do telling the story, the better we’re suited to share our success with the farmers, growers, and our environment.
Here, farmers grow sustainably, organically, and thoughtfully. Here consumers buy food labeled with farmer’s first names. The topography offers an abundance of farmland, biking country, fishing, hiking, foraging, and paddling. This place thrums to nature’s seasonal rhythms and abides in the wisdom of sustainable practice.
We have brought this wisdom into our work and we want to share it widely. We are making dry-cured salami. This sausage is a superlative of taste, texture, and artisanship. The final result, a raw but miraculously shelf-stable sausage, is the culmination of an astonishment of intention and effort. From breeding to raising to processing to tending during fermentation and drying to delivery and preparation at homes far afield, this process involves stewardship, thoughtfulness, and care.
Money raised will be spent on initial production and inventory. We want to get to you, without further delay, our product that has been years in refining. From the humble root cellar where Ryan first began honing his craft to the test kitchen on the ridge overlooking Newton Valley and the Bad Axe River, the salami has evolved and we have grown confident in what we believe is the best salami money can buy. With your support we will begin production of our recipes and techniques at a third party processing facility. With this crucial step we will begin to generate much needed revenue and costumer support to warrant a facility of our own.
Our ultimate goal is to make and source here in the Driftless, steeped in the ethos of sustainability and thoughtfulness.

Risks and challenges
Production will initially take place at a third party processing facility in order to roll out product in a timely manner. Our own salumist, Ryan Wagner, will be overseeing the production to ensure it is to his quality standards. Due to the limited number of certified processors in the state of Wisconsin, production numbers may be difficult to meet. We will be working as diligently as possible to secure space within those processing facilities as well as working towards opening our own facility. Financial institutions will be more likely to fund our own facility with proven support from Kickstarter and online sales.
If our own production facility takes longer than expected to fund, our production numbers could be limited and meeting demand could be delayed. We will continue to be persistent in our efforts to supply all of our supporters with great tasting salami and be as creative as possible in seeking solutions to our start-up journey's challenges.Learn about accountability on Kickstarter
