My name is Troy DeRego. I have a small artisan bakery in the college town of Starkville, MS.
I baked my first loaf of bread in the middle of the Atlantic in the galley of a sailing ship as a student during a semester with the Sea Education Association on board the S.S.V. Corwith Cramer.
I love travel, exploration, adventure, science, and simple, honest, natural food. I try to bring all of these together in the business I have created.
I started making and selling artisan bread at the local farmer's market, something missing in my town, so as word-of-mouth spread, I was able to grow the business and open a retail bakery on Main Street. Along with my assistant, TJ Kepner, we make whole grain sourdough products for our community.
A retail bakery must have a diverse selection. Everybody comes in at different times of day looking for something a little different. We have tried making just about everything you can imagine, most with a pretty good level of success, but finding a direction to grow the business has been a challenge. You see, bread and pastries have a very short shelf-life, and each day, no matter how busy we were the day before, we would find ourselves starting from scratch to fill the shelves.
Then, inspired by my voyage at sea, the solution came to me. Sailors used to fill their ships with hardtack, or sea biscuits, simple (but tasteless!) crackers that would last for the entire voyage. What if I could make them taste great with fresh-milled whole grains and naturally fermented sourdough? We had re-discovered Sourdough Crackers: THE ORIGINAL ROAD FOOD!
After many experiments and test batches, we launched the new crackers at the farmer's market last summer. They were a big hit. Everyone seemed to find a favorite flavor: Starkville Sourdough, Flaxseed Rye, Sunflower Seed, Sesame Sticks.
My favorite are the Craft Beer Crackers made from spent grains from local beer brewers. The sourdough ferments the toasted grains and brings out many of the same flavors that will appear in the beer!
Finally, we have a product that we can package up and share with the world! But, in order to grow our business, we need your help.
We are a small shop, and we need to make and sell an awful lot of crackers in order to achieve our goals and remain sustainable.
We strive to be a zero-waste operation, use the best natural products we can get our hands on, and grow in a manageable and sustainable way. We want to build something that will last and make the world just a little bit better than it was before.
To do all this, we must walk before we can fly. The next small step we take involves you! We are a small shop, and we need to make and sell a whole lot of crackers in order to achieve our goals. The piece of equipment that will have the greatest impact for us is a table top dough sheeter. We will be able to increase production and buy us some more time to dream up new products.
$6,000 will get us there. We have several levels of support to choose from, and each one comes with at least one bag of our Whole Grain Sourdough Crackers.
