Farmstead Flatbread is a farm-to-table collaboration between a baking operation and Elephant in the Field, a community-based farm and education center, tucked between the foothills of Hunger Mountain in Waterbury, Vermont. Elephant in the Field is a platform for sustainable land-based enterprise and features a working, diversified vegetable farm, small goat and chicken operation, early education center, and a workshop and community event site. Our Kickstarter project is seeking funds to build an open-air structure that houses an earth oven for community baking, cooking classes for youth, a large workshop table for homesteading and survivalism classes, and a small farmstand. Farmstead Flatbread’s mission is to explore alternative farming models that help restore the land, enrich the local community and serve as a model for others to do the same. With so many of our food and economic systems failing to provide for the people and for the land honestly and sustainably, it is time to create these types of alternative infrastructure projects that have the ability stimulate discussion, educate the community and create local action.
Why flatbread? It’s a common food with universal appeal, made in one form or another by nearly every culture in the world. It can either compliment or directly utilize inputs from any localized food system, and because it’s so darn tasty it’s a great way to bring folks to the table. Each week, the project will will host a “Flatbread Friday” event to highlight seasonal farmed and foraged inputs, discuss new ideas and collaborate with other food producer in the area. During the rest of the week the structure will be used for classes, community events, baking sessions, live music and other activities.

The Robbins starter lives in the backcountry and thrives on a rich diet of wild berries and seasonal fruits, maple syrup, spring water and a mix of hearty, Vermont grains. If you live locally, you can swing by the farm for a fresh scoop of this lively starter. You are also invited to our weekly, "Flatbread Friday" nights. Our breads are original and all-local! We ritually hike into the hills to tend our starter, grow our veggies within a stone's throw of the oven and source the remaining ingredients from regional foragers, herders, brewers, cheesemakers and grain growers. We honor your contribution with one of our fresh-baked flatbreads, which you can pick up at the farm during one of our Friday events or at the mid-week firing. You'll also get the sourdough starter, and a thank you on our Facebook page. For non-local folks, we're really sorry that we can't ship you a bread, but we can donate a flatbread to a local community organization or area non-profit in your honor. Flatbread is fun to make and easy to learn! Come spend an afternoon with us for an introduction to wood-fired baking. You will learn how to tend a starter, create a dough, stoke a proper fire and bake a simple flatbread. We'll be holding regular community lessons, so you can come down when it fits your schedule. You'll get to take home some fresh starter and the bread you make, plus some other goodies we may try out in the oven. If you aren't from the area, we'll thank you on Facebook, send you the sourdough starter kit and make a flatbread donation to a local community group in your honor.Estimated delivery:

For some folks it's all about the bread! If you aren't up for a lesson but you love the flatbread and want to support the project, this reward is for you. We love to collaborate! Over the years, we've enjoyed working with fellow artists to design and illustrate the visual narrative for our culinary adventures. We have partnered with a local artist to design an original, screen-printed t-shirt inspired by the project.
