We set out to design a range of super-efficient kitchen knives combining premium materials with manufacturing excellence. We have focussed on the essentials: a chef’s knife, a paring knife and a bread knife.

Who we are

Matthew Hilton Studio is a London-based design office working across a range of lighting, furniture and product design.

Crane Cookware is a British micro-brand specialising in the design and manufacture of performance tools and accessories for the modern everyday kitchen and table.

Pragmatic Design

We all have a keen interest in tools. Tools are pragmatic in their design and functional in use, and a good tool should last a lifetime. We set out to design a family of knives  that are ultra-efficient, beautiful and that harness leading-edge knife making technology.

K Range - a closer look

Most standard chef’s knives have a blade length of about 20cm which we thought was slightly too cumbersome. We believe that a slightly shorter blade is better adapted to everyday use, more comfortable and better balanced in the hand. We decided on a blade length of 170mm for an all-purpose chef knife, suited to both men and women.This provides enough length and plenty of control at the tip for precision cutting on the chopping board.

The blade height at the heel provides optimum knuckle clearance and takes into consideration wear from sharpening. A slightly deeper blade height allows the knife to be sharpened for years to come without compromising on function in use.

We wanted to design a handle that would allow people to use traditional or pinch grips in a natural, comfortable way, without being too prescriptive. Taking this into account, we designed the knives with very pared-back handle and blade shapes, using simple geometries to combine these details with authentic ergonomics.

The paring knife has a blade length of 110mm, providing a bit of extra length and more versatility on the chopping board, whilst giving you the option to use a forward-pinch grip for super delicate off-board tasks.

The bread knife uses the same scales as the chef's knife for the handle. The deep bevels of the scalloped teeth allow for future sharpening without loss of function.


Made in Sheffield

We have teamed up with Taylor’s Eye Witness who have been making knives in Sheffield for 180 years. Their expertise in heat treatment and knife processing sets them apart as a manufacturer. They achieve this through a combination of leading-edge technology and skilled hand work to make products of enduring value.

Prototyping

The shape of the blade has been very carefully considered. We have consulted with professional chefs, Knife expert Rodrigo Batista, raw material manufacturers and knife makers, slightly varying the depth of the blade, the ratio of flat to curve on the cutting edge and the top, and radius at the heel of the blade, making a blade that can cut, slice and chop with comfort.

We then made 3D-prints of  different handle designs, finally settling on a ‘full-tang’ design, where the steel runs all the way from front to back, sandwiched between two scales to make the handle - the simplest and most direct way to make a knife.

Materials

We have selected the highest quality Swedish steel for the blade, which, if properly looked after, will last a lifetime. Sandvik latest generation knife steel has a higher carbon content than many stainless steels as well as an excellent balance of other alloys to achieve the ideal combination of edge retention, wear resistance and toughness while remaining easy to sharpen. The solid American black walnut handle and brass rivets will gain a beautiful patina over time.

The blade is made from Sandvik 14C28N - 58-60 HRC Stainless Steel, sharpened to an angle of 30º to ensure optimal cutting performance

We prototyped the knife in Sheffield and have all spent time using it, making minor adjustments to the details. Now we are satisfied with the design, we have come to Kickstarter to seek funding to go into full production.

We are also offering the B1 chopping board. Designed in 2018, made from a single solid piece of walnut, included in the 'Knife and Board Set' as well as on it's own.

Risks and challenges

We have our manufacturing partner and rewards supply chains in place and ready for production. We have prototyped and tested the knives in the factory that will be making the knives. However should any unforeseen production or fulfilment issues arise we will address these immediately and communicate transparently with our audience at all times.
