     Claudia, a Chicago pop-up restaurant, needs your help to open a permanent brick-and-mortar location.  Named for Chef Trevor Teich’s mother, this exclusive hidden gem was a Jean Banchet Awards Nominee for “Best Alternative Dining” and was awarded “Best pop-up dinner" in Chicago Magazine.  Now that we’ve finally found our dream location, we’re ready to take the next steps in bringing Claudia’s new incarnation to life!

     Chef Teich is a Chicago native who has worked in some of its best restaurants including L2O (three Michelin stars), NOMI (one star), and Acadia (two stars), as well as Twist by Pierre Gagnaire in Las Vegas (Gagnaire was voted best chef in the world in 2015 by Le Chef List of The Best Chefs in the World). He began Claudia 4 years ago as a way to share his creations and to explore fine dining from his own perspective.

 OUR PLANS
 

     As a ticket-based establishment, our adventurous multi-course tasting menus can unfold like a well-paced story full of exciting twists and surprises.  We always focus on ingredients in season, so the menus change regularly throughout the year.  (You will have a choice of six or ten courses to determine what kind of evening you would like when you dine with us.)  With a place of our own, we’ll be able to bring Chef Teich’s culinary vision to a wider audience and build it into something truly special.  If you’ve seen what we can do on a shoestring budget without our own kitchen or full-time staff, just imagine what heights we could reach with your assistance!

     The planned location is nestled between Lincoln Square and the iconic Chicago lakefront.  We aim to be a part of the community—teaming with local farmers' markets, inviting chefs from around the world for collaborative dinners, and above all, welcoming you with excellent service and an unforgettable meal.  The restaurant will seat about 25-30 so that we can give each of our guests an attentive, unique experience.  With our own space, we can be even more creative and uncompromising, offering you carefully crafted cuisine that can only be accomplished when we are able to attend to every last detail.  In addition this will give us an opportunity to create jobs as well as support local vendors and craftspeople within the Chicago hospitality industry.

Risks and challenges

We are depending on your support to get this project off the ground. There are inherent risks in opening and updating any restaurant, but we will do our very best to fulfill all rewards in a timely fashion once the goal is met. We hope to open this year and will update our backers as soon as we've assessed our budget and timeframe for renovation and repairs.
