Hi everyone! I'm Chef Nicholas Pallone, and I'm embarking on a crazy new journey with a talented crew to bring you Academy, a neighborhood restaurant situated in San Francisco's Lower Pacific Heights, walking distance from the Kabuki Theater and Japantown.
In a nutshell, our restaurant will emulate the definition of an academy — a place to promote and maintain culinary standards, where the community can come together to enjoy, share and build on the bountiful culture of the Bay Area.
What it's all about: food, drink, art and community!
Academy will be a place to celebrate the best, local, seasonal ingredients every day. Our focus is on sustainability — we work with over 15 area farms and ranches, and the food they are growing is a-ma-zing.
Inspired by the family meals served my Italian grandparents’ house, our menu will feature Neapolitan-inspired pizzas and small batch charcuterie — salumi, coppa di testa, capicola, soppressata, and cotechino to name a few. From whole animal butchery to house-brewed vinegars to milling our own flour to pickling and preserving… we’re excited to explore a whole world of possibilities and to share it all with you.
But that's not all! Academy will have over 25 craft beers on tap, and an array of local wine taps too. The legendary and knowledgeable Jason Michael Burton will be managing our bar and front of house, guaranteeing warmth, laughs and a good time for all.
And then there’s… art! We are inspired by the creative and innovative culture that encompasses the Bay Area, and hope to channel it into an ongoing showcase for local, national and international artists. Art is so important to us that we are teaming up with Berlin artist Christian Rothenhagen from the get-go — he’s designing our logo, donating beautiful and original prints for our Kickstarter rewards and producing one of a kind, on-site work for our space!

Why do we need your help?
We are collaborating with the fabulous folks at Swell Spaces Interior Design in Oakland to undertake a complete remodel on a shoestring budget. We need to revamp our dining area and bar, buy and install a rad new pizza oven, remodel the kitchen, buy a bunch of cool kitchen toys, blow out some walls and rebuild others, install new awnings… you get the picture.
Kickstarter is giving us a chance to make this a reality, so please take a look at our great rewards and help us hit our funding goal!

Picture this: You walk in to a space that is warm with reclaimed wood, communal tables, friendly faces, an inviting bar. Subtle aromas of fresh herbs and toasting spices as you walk into the restaurant. A versatile pizza oven holds a cast iron pot of braised and caramelized meat for the day's service.
People sit and share a board of house-cured meats, crunchy garlicky pickles, plates of roasted seasonal vegetables and other assorted accoutrements. You see some inspiring artwork on the wall, and hear the uplifting tunes coming through the speakers .

Risks and challenges
A restaurant is always a challenging undertaking. This is to be a complete remodel, and most permits are already in place.
I have been in the restaurant business for over 15 years and have gained invaluable experience to help this business navigate through any obstacle, as well as to grow and succeed in San Francisco's already heady restaurant scene.
