Update! We have reached both our 1st AND 2nd goals! So now we are going big time. Goal #3 is $15,000! Which would allow us to buy a smoker/grill for the parking lot...which would give us the ability to sell our fresh, hand linked sausages straight off the grill! And probably some other grilled/smoked favorites. So keep spreading the word!
Seems like a day doesn’t go by when I don't get asked either “Is there a butcher shop in town?” or “Do you carry local grass fed beef?” or something similar. I’ve been working for local chain grocers for the last 5 years and those are the in the top 3 all time questions. Right behind “Where’s your bathroom?”.
The next thing I hear all the time is “Well the man/woman on that food show told me to go to my local butcher and…” and they wonder why the megachain super mart doesn’t look or act like a friendly neighborhood butcher shop.
So after 5 years of hearing the cries of the town, I’m working hard to open a local neighborhood butcher shop in downtown Bellingham. I have found the perfect location on State street and am working with the health dept to figure out exactly what they will let me do and not do. (Hanging whole pork legs for a year at room temp to make prosciutto is frowned upon).
This Kickstarter campaign will raise the necessary funds to purchase a grinder, sausage press, and band saw so once open we will be well equipped to serve this town. Bellingham will finally have a local butcher shop again where you will be able to find local & sustainable beef, pork finished on acorns, chicken, lamb and more! Bringing a butcher shop to Bellingham also means the farmers have another avenue for their products which in turn means possibly getting more USDA certified meats...which means we could potentially see more Whatcom County Grass-fed Beef in our restaurants and even in our schools. So not only are you helping open one little shop you're helping change the food system for the good of the whole county. Also, every penny above and beyond the goal will go to improving the space to better serve you. More refrigeration, more tools...and even MORE refrigeration. (To be clear, the business is started, this is to take it brick and mortar and be properly equipped.)
There are lots of funding options and if you don't see something you are interested in...say a whole pig...or lamb......or chicken...just let me know. I'll add a reward especially for you. We will also be having a grand opening/thank you party just for our Kickstarter backers. So spread the word! Risks and challenges
One of our challenges will be teaching people the true "cost" of meat. The factory beef industry and centralized cutting facilities have made it difficult for local butcher shops to survive. Which is why it's a lost art. BUT, I believe with the help of the people in this town who already understand that you can't get a Cadillac for the price of Kia, we can change the landscape. And sure, some people are fine with feedlot beef from a factory somewhere...but there also plenty of people who want to know where and how the cow was raised.
