Makgeolli is coarsely filtered, allowing tiny rice particles to flow through. These delicate rice particles, or 'rice dust,' add great flavor, aroma and texture to the beverage.
Over time, the rice sediments will naturally fall to the bottom. To get the full makgeolli experience, it is best to mix the sediments back into the drink, by either giving it a quick shake or flipping it over.
