About this project
I want to be a part of Central Virginia's (Charlottesville & Richmond) growing food community, support local farmers, and be the first mobile culinary destination for authentic Neapolitan pizzas cooked in a mobile wood-fire oven.

When I had my first taste of Neapolitan pizza, I fell in love with its simplicity. The lightly charred crust was soft with a smoky flavor while the tenderness held together the sweet mozzarella and fresh tomatoes. This incredible experience has given me the desire to learn and share it with everyone. Since involving myself in the process of making a pizza of Naples, I feel as though I am experiencing tradition, a piece of history; a process celebrated by the people of Naples. I want to share this experience with you because it is a celebration of art, culture, history and life.
Professionally trained by two world-renowned pizzaioli (pizza makers) from Naples, I learned the 200-year old recipe, methods, and techniques of making Neapolitan pizza from Giulio Adriani, owner of Forcella, NYC, who is a Senior Verace Pizzaiolo at the Associazione Verace Pizza Napoletana in Naples, Italy and Roberto Caporuscio, owner of Keste/Don Antonio, NYC, who is the US Delegate for Associazone Pizzaiuoli Napoletani. Both organizations seek to preserve the quality of the process and ingredients of pizza according to the Neapolitan tradition.

What makes this pizza special? It is how the dough is prepared and the methods and techniques used in making this authentic Neapolitan pizza stand above the rest.
Italian milled flour, water, salt and yeast are the simple ingredients to this dough. The texture of a Neapolitan pizza crust comes from the process of gently mixing the dough, resting it overnight for fermentation and gently hand stretching it the next day. The smoky flavor and aroma of the crust is a result of baking the pizza at 800 degrees for 60-90 seconds.
The traditional toppings of a Pizza Margherita are simple: San Marzano tomatoes, fresh mozzarella cheese (whole milk or bufala), basil and extra virgin olive oil. Yet the simplicity and elegance of a Neapolitan pizza serves as a wonderful base for toppings made with seasonal fresh ingredients from the local farms in the community.
Traditionally cooked in a wood fire, it is the hearth that brings the community together. With passion for tradition and simplicity in food, I want to bring the taste of Neapolitan pizza to the community just the way it is experienced in Naples today.
The way Kickstarter works is that if I don't reach my fundraising target by the time the campaign ends, I won't get any of the funds. It's all or nothing and every penny counts, bringing this project one step closer to life.
In my efforts to recreate the tradition and offer this authentic taste, your help is needed to purchase baking equipment and tools necessary to preserve the authenticity.
AVPN requires a fork or spiral mixer (which simulates human hand motions) to create the soft dough. The dough is gently opened by hand on top of a marble top counter. A special oven that can reach 800F degrees is a prerequisite to achieve the slight charred and smoky flavor of the Neapolitan crust.
The money donated will be used to purchase:
- Wood Fire Oven on trailer with double axle wheels
- 35 kg Capacity Mixer (approved by AVPN to make the Neopolitan dough)
- Pizza Prep Table (a place to stretch and dress the dough, also stores dough and toppings in refrigerated section)

The hearth is what brings the community together. With passion for tradition and simplicity in food, I want to bring the taste Neapolitan pizza to the community just the way it is experienced in Naples today.
I envision bringing Neapolitan pizzas to Charlottesville / Richmond locals at:
- Farmer's Market
- Local Festivals (Music, Wine/Beer, Food, of course)
- Local Sporting Events (cycling, running)
- Catered events (local wineries, weddings, company parties)
- Your backyard for a celebration! (graduations, showers, birthdays)

The opportunity to bring back the 200-year old tradition of pizza making and authenticity in the taste of Neapolitan pizza combined with the local ingredients from the local farms will be a phenomenal experience for the community .
Introducing the real taste of what authentic pizza is, will be life-changing as it has been for me. And to change the pizza concept of fast food to "slow food" will be gratifying for all who care about their bodies, health and well-being.

Risks and challenges
I have already been working towards my goal since my first bite of a Neapolitan pizza.
Aside from my intense professional training with Neapolitan pizza making, I have been working towards my goal by choosing a name (bufala! Pizza Napoletana), acquiring the website and domain, and I am in the process of applying for licenses, permits and inspection. The next step is to purchase equipment and supplies necessary to bring the authentic Neapolitan pizza to the local community.
Nothing in life comes without risks and challenges. And like any goals, it's all about moving forward, empowering oneself with knowledge in order to make good business decision and enjoying the process. This is also an opportunity for my children to witness the results of hand work, commitment, and passion.
