We are the Bishop Cider Company.
We plan to manufacture and sell craft hard cider. Our cidery is in the Bishop Arts District, which is a cultural hotspot in Dallas, TX. The culture of Bishop is based on an appreciation for both the traditional arts and the culinary arts. Bishop Cider will be infused with the same. In comparison to other cideries, we are very different in our approach. With our utilization of unexpected ingredients, we are able to make some very unique craft cider.
Many Americans aren't aware of the existence of hard cider. We have been in countless restaurants where we see the most confused look on the face of servers when asked, "Do you have any hard cider?" Even more interesting is the common response, "No... but we have hot tea."
Hard cider is an alcoholic drink that results from the fermentation of cider or fruit juice. The most prominent of which are made with apples or pears. If made with Apples, it is generally referred to as Hard Apple Cider in the US and simply Cider in Europe. When it is made with Pear juice, it is called Perry.
A quote from the year 1840 about President Harrison, "Harrison would probably be just as happy with a jug of hard cider to sip in front of his log cabin than he would serving as president."
The US hard cider market consists of cider that varies very little in both ingredients and flavor. We have been making hard cider for quite a while now and realize the diversity and flavor potential.
People have been getting really creative with brewing beer. They have been using ingredients that push the boundaries and are often downright shocking. Current cider is lacking the same creativity. Together, we can change that.

Pint Glass - It is 16 ounces (hence the pint) with the BCC logo emblazoned on the side.
T-Shirt - Gray shirt that screams BCC. This is the first time a shirt has been printed for BCC. Get the first of many. Not to mention it is supa soft thanks to American Apparel.
Mini Barrel - this 3 Liter oak barrel is made of white oak and manufactured in TX. They can be used decoratively or put to better use. You can age your beverage of choice in the barrel to smooth, enhance, or mellow the flavor in just a few weeks because of the increased surface area touching the liquid. The BCC logo is laser-engraved on the face. We'll provide full instructions on how to use the barrel to make sure you don't waste a drop.
Apple Tree - Nope. This isn't a joke AND they are 5 feet tall. We will ship you a tree that produces a rare variety of apple. These ship anywhere in the contiguous 48 states and we'll be sure to send you one that grows well in your agricultural zone. There are over 7500 apple varieties known and yet only about 100 are commercially available. Many of these apples are disappearing because it is easier for large producers to focus on a few varieties. Fight against the apple extinction and save the apples! The tree that we send you will provide apples that are good for both eating and cider making.
Current Status of the Cidery:
We acquired a space in June of 2012, however, we are just now completing the permitting process. I know.
We plan to open our tap room to the public and distribute the first kegs to restaurants in late April/Early May.
Raising money on Kickstarter will allow us to set up national distribution through online ordering. Shipping alcohol is a logistical nightmare and the funds will help smooth the process.
We will keep you updated with all progress made at the cidery and hope to ship you a cold one soon.

Risks and challenges
We have fulfilled the most difficult licensing and permitting hurdles, so most of the risks are already mitigated.
