Born and raised in Chicago, I have been exposed to all kinds of food. It was my first job, favorite thing to do daily and turned into my future when I chose to go to Kendall College for Culinary Arts and The French Pastry School for Pastry.
After years of hard work and lots of experiences in Farmer's Markets, all types of dining, and working with champion bakers, I've developed a level of professionalism and respect for real food that I find scarce in today's food culture.
I was initially taught how to bake bread from my best friend's father, Charlie, 7 years ago, and have "broken bread" with everyone that has crossed my path since. Baking is both an art, a science, and a hobby with endless possibilities. It's built civilizations and fed armies through war. It has made thousands of years of history and today's options fail to represent many of these traditions. It's never too late to change!
